I love pumpkin and am looking for some good pumpkin related recipes--besides pumpkin pie.  any suggestions..................

This isn't a recipe, but at Trader Joe's right now they are selling a FABULOUS pumpkin butter!  I seriously went through a jar in less than a week and had to go back and stock up on it!  Only $2.29 a jar and only 40 calories, no fat per 1 tbsp serving!  It's good just on crackers or toast, but I think you could use it to make some good desserts as well!
sns817: I try to avoid TJ at all costs.. I can't resist their cakes, sweets and many other stuff... I feel dizzy..really:)

I like this quick simple recipe:

1/2 can pumpkin

Cinnamon and nutmeg to taste 

1/4 sup sugar free maple syrup

3 packets of Splenda

Place pumpkin + cinnamon and nutmeg in a microwave safe bowl and heat for 3-5 minutes, until hot and steamy. Add syrup and Splenda. Mix until smoothe and enjoy!

 Sorry about the sugar free aspects of the recipe. I am a Type 1 Diabetic so I have to use the sugar free stuff. You can change it though if you don't like sugar free products. :)

SO SO SO GOOD, super easy to make, and less than 100 cals for a decent size muffin!

btw, i know this isnt a recipe but has anyone tried edy's pumpkin icecream?? its a little bit of heaven =)

I made these this week and they are amazing.  I put them in the freezer and they taste just as great after being zapped in the microwave.

Oh, wow - I agree, the TJ pumpkin butter is out of this world.  I like to put it on Nutrigrain low fat Cinnamon waffles (mmmmmm....).  It's also great heated up and spooned over vanilla or cinnamon ice cream. 

Okay, now I gotta get some more - my problem with it has been trying to find it still on the shelf! (it's a very popular item).

Another good use for pumpkin (or the TJ pumpkin butter):  a tablespoon or two in oatmeal, with pumpkin pie spice. 

I like to put pumpkin, pumpkin pie spice, cinnamon, and sometimes chopped nuts into my oatmeal. Very filling, lots of fiber, and tastes like pumpkin pie without the crust.

pumpkin pancakes/waffles:  make the batter for regular pancakes as you usually would, but less milk + much more water, more egg.  i like to mix in raisins + pecan chips.  only use a little bit of pumpkin or they don't cook as well, then cinamon, vanilla, ginger, allspice, mace, cloves, nutmeg.  make the batter REALLY thin, almost watery, don't pour the batter too thick.

I make a pumpkin oatmeal that tastes like PUMPKIN CHEESECAKE. Here's how:

1/2 cup regular or old fashioned oats

1/4 cup low fat cottage cheese

1 cup fat free milk

1/4 cup pumpkin

1/2 tsp. cinnamon

Dash of pumpkin pie spice

Splenda to taste

Heat milk and oatmeal. Stir in pumpkin, then cottage cheese. After it begins to boil/ simmer add the pumpkin pie spice. Continue stirring, add the cinnamon. DOn't stop stirring. After it's done let it cool and add the splenda. It's really yummy and I NEVER get sick of it!

I just made a Pumpkin sweet potato bisque that is out of this world. I added a little dried chipotle seasoning to spice it up and it really added some zing. I gotta have another bowl. yum.

I take 1/2 cup light and fit vanilla yogurt and 1/2 cup pumpkin.  I add pumpkin pie spice and a packet of slpenda and you have a cup of pumpkin pudding for 80 calories as well as high protein and fiber!
