Any good recipes for vanilla cake with vanilla icing?

I'm not the biggest chocolate fan, but saying I am obsessed with vanilla cakes and icings is an understatement!  Buttercream icings would be preferable, lol!  Thanks!

well, I can't help you with the buttercream...but I am a big white cake/white icing fan as well.  I helped that craving with a tip from a weight watchers friend.  Use 1 can of diet white soda with one box of white cake mix(i like the confetti kind) bake according to directions.  then use fat free cool whip as icing.  I thought they were moist and delicious, and even my diet food hating friend loved them.  they have a light lemon-lime flavor to them, but they are delicious in my opinion!  Hope I was helpful!

 I do this all the time too! Actually, I have a dozen double chocolate chip muffins sitting on my counter right now that I made with diet cola. lol  My family raves about this "recipe".

We have even tried using diet cream soda at Valentines day to make pink cupcakes, I put fat free cool whip and a strawberry on top.

I have a great buttercream icing recipe but it doesn't get used much since I started calorie counting, since the name BUTTERcream pretty much says it all! ;o)

2 cups room temp butter softened (substitute 1 cup for Crisco if you need it to withstand warm weather)

3 cups icing sugar

5 tbls water

2 tbls vanilla

Add the icing sugar and vanilla to the softened butter and gradually add the water one tbls at a time, you may not need it all, you may need to add a bit more, really seems to depend on the weather outside! It's great for decorated cakes.

This THE BEST vanilla cake I have ever made/tasted. Trust me ;)

I also do the soda thing... You can make good brownies as well just use reduced fat brownie mix with 1 can diet root beer soda and as for the cake  there are so many different varietys you can do

 

Here's the recipe to Diet Soda Cake and some of the variations. I like to add a couple of egg whites but others don't and say there's turn out fine. My favorite is Orange Cake mix with Diet Orange Soda.

Diet Soda Cake

Serves 20 -
1 box cake mix - any flavor (ie Strawberry)
10 oz. diet soda - any flavor (ie Strawberry-Kiwi Soda)
2 egg whites
Bake in a 9x13 pan according to mix directions. For Frosting you can use Cool Whip mixed with SF/FF pudding or even jello.
A Few Combinations: (all with DIET SODA/POP!!)
orange cake / Mountain Dew
cherry chip cake / Cream soda
lemon / lemon
angel or yellow or orange cake/orange soda
white cake/ peach
spice cake/ lemon-lime
white cake/ginger ale
devils food or chocolate mix /Cola
devils food cake/ Vanilla coke
chocolate cake/ root beerchocolate cake/ cherry coke

Makes 12 cupcakes

Preheat the oven to 350 degrees.

 For the frosting

3 large egg whites

1 cup powder sugar (1/2 Substitute)

Pinch salt

3/4 teaspoon vanilla extract

Cream of tarter

 

For the cupcakes

1 1/4 cup all-purpose flour (or half whole wheat)

1/2 cup finely ground almonds

1 1/2 teaspoon baking powder

1/4 teaspoon salt

2 eggs (or 1 egg + 1 egg white equivalent)

3/4 cup sugar (or splenda)

2 teaspoons vanilla extract

1 1/4 cups peeled zucchini, finely grated

 2. To make the frosting: Combine the egg whites, sugar, salt and vanilla extract in a heatproof bowl set over (not in) a pan of simmering water. Stir continuously over heat until the mixture is warm and the sugar is completely dissolved, 1 to 2 minutes.

 3. Remove the bowl from the heat. Using a handheld electric or standing mixer set on high, beat until the mixture is entirely cooled, glossy and stiff, about 7 minutes. Blend in the lemon zest until smooth — once smooth, take care not to overbeat or the mixture will get lumpy. Let frosting set and cool in the refrigerator (at least 30 minutes), while making the cupcakes.

 4. To make the cupcakes: Arrange a rack in the center of the oven. Line a 12-muffin pan with cupcake liners.

 5. In a bowl, whisk together the flour, almonds and baking powder; set aside. In another bowl, beat the eggs, sugar, salt and vanilla with a handheld or standing mixer until thick and light-colored, about 4 minutes. Beat in the zucchini on low speed until fully incorporated.

 6. Add the dry ingredients and beat on low speed until fully incorporated, scraping down the bowl once with a spatula during beating. Use a 1/3-cup measure to spoon into the muffin cups.

 7. Bake until a toothpick inserted into the center comes out clean, about 20 to 25 minutes, turning the pan midway through baking. Transfer cupcakes out onto a wire rack and cool completely before icing with the chilled frosting.

 how many calories are in one slice??

Calories per slice would depend on the cake mix you use....diet soda shouldn't add any (or I suppose it could be 10-15, since some diet brands do admit to a few calories) and 2 egg whites shouldn't be more than 25 or so...

So you spread approximately 25-40 calories over the number of servings the cake box tells you, and that should tell you how many calories per slice. (or you can multiply the per serving calories on the box times the number of servings, add the calories from the soda and egg whites, and divide that final number by the number of servings you create).
