so i was planning on having a type of wrap-like thing, then decided to get creative. my recipe is:

2 Morningstar Farms Buffalo Wing Veggie Wings (80 cal)
2 cups of lettuce/salad mix (around 10 cals according to the package)
1 small corn tortilla (the kind i found has only 45 cals)
2 tbsp Walden Farms bleu cheese dressing (0 cals)

Directions:
-cook buffalo wings according to box instructions in the oven (i believe it's 18 minutes at 375, turning halfway), and bake the tortilla with it as well. when you go to flip the wings, take out the tortilla because it will be crispy enough
-once the wings are done baking, put them in a plastic baggie with the 2 tablespoons of dressing and toss around until they are covered
-break tortilla chips, then add all to the lettuce and toss

cals: 135

this can easily be adapted to be a larger meal by using a bigger tortilla, more buffalo wings (they are small) or a different brand of dressing. i know many people aren't fans of WF products, but i thought the dressing tasted fine and really helped cut the spicy-ness of the buffalo wings (they are SPICY!...in my opinion at least), although i'm not really a dressing snob so maybe it doesn't taste anything like bleu cheese.

That sounds yummy!  And I like the fact that those Morningstar things are called "veggie wings" :D

Here's a nifty mini-meal I'm eating right now:

  • 1 cup broccoli florets
  • 1/4 cup dry whole wheat penne
  • 1/4 cup shredded sharp cheddar cheese
  • 1/4 cup dried crunchy peas

Cook pasta according to directions or taste.  Add broccoli in water with pasta during last 2 mins of cooking time.  Drain and place in bowl.  Top with cheese and crunchy peas!

about 300 cals :)
