For a less sweet and lower calorie cake, eliminate the sugar Use only very ripe persimmons. A properly ripe persimmon actually feels very squishy--many people mistake it for being rotten. This is not the case, and anything that is not squishy and somewhat dark, translucent orange will not be sweet enough.

Recipe Ingredients for Good Times Persimmon Custard

1 granny smith apple
1/2 cup sugar
1/2 cup skim milk
2 bananas, very ripe
6 oz. Persimmon
1 egg, lightly beaten
2 oz. Organic Raw Cacao Powder

Recipe Directions for Good Times Persimmon Custard

  1. Preheat over to 325.

  2. Peel, quarter, and boil the apple in 1 cup water, reducing the heat and adding the sugar. Reduce the mixture down to about 1/2-3/4 cup and let cool.

  3. Peel the persimmon and mash it into a gloop with a fork in a large mixing bowl. Add the 2 bananas and mash those ingredients well in a large mixing bowl, mixing with an electric beater on low, adding the milk, beating until you get a smooth batter texture.

  4. In a smaller bowl, stir the cacao powder into the egg.

  5. Using the electric beater, gradually blend the egg mixture into the fruit mixture until homogenous.

  6. Next, once the apple concoction and the lentils are cool, you can blend each one into the egg mixture.

  7. Pour batter into a greased pan and bake 60-90 minutes until set. using a hot water bath, placing the pan into a larger pan, and filling the outer pan with 1 inch water up the side. Pudding is done when knife inserted near center comes out clean.
