I visited my mother this weekend, and as soon as I walked into the kitchen I saw about a dozen cupcake/muffin things in a cake dish. She asked if I wanted one, and although they looked delish I respectfully declined...until she told me that each one only had 50 calories! Apparently it's a weight watchers recipe. I gotta tell you, they are delicious, sweet and perfect for satisfying your sweet tooth without ruining your progress.

Pineapple Angel Food Cupcakes

1 package of angel food cake mix

1 can of crushed pineapple (19oz)

Mix cake mix and pineapple (including juice from can) and mix well (do not add anything else, just these two ingredients)

Scoop into cupcake baking tin 

Bake on 350 for 20-25 min until brown on top (use a toothpick to check, when it comes out clean they're done)

And that's it! Don't need to ice them, they are deliciously sweet just like that!

I wonder how it would taste with other canned fruits...I'm thinking pears or peaches. :P mmm

I make the same thing but add a tsp of brown sugar to the bottom of the cup before the pineapple.  They make great treats.

You better believe I'll be trying this, Nikki.  I LOVE angel food cake, and it's quite low in calories for a cake.  Pineapple is low, as well.  Sounds delicious, and a treat I won't feel guilty about.  Thanks for sharing!!

how many cupcakes does one package make?

Most boxed cake mixes are 18.25 ounces and make 24 cupcakes.  An angel food cake mix is 16 ounces, so I'm guessing, what, about 20 cupcakes?
