Greek type rice recipe, anyone?

Ok, we are having greek pita pockets with chicken tonight....I have some leftover white rice that I was wondering if anyone had any ideas what to do with it...

Toss it! lol!! White rice is enemy number 1 behind pastas!! Opt for brown medium grain instead and you'll feel much better!!! =D

I also have a mean recipe for Biriyani-style vegetarian Indian rice. It's really quite healthy and made with brown and wild rices. It's great with greek foods like lamb or chicken kavurma (basically meats marinated in lemon, pepper, and salt, and olive oil... then it's cooked over low heat, and then served with fat-free greek yoghurt mixed with fresh dill... you top it off with cucumber slices and tomatoe - magnific!!)

Good luck with Greek! I have a bunch of great recipie's but it's very hard to maintain good health with Greek foods!! :/

I agree with switching to brown rice - it's much healthier, and I just like the taste and texture better. (Or better yet, try Quinoa.)

Whatever rice you have, you can make it "greek style" by tossing in some chopped spinach, diced roasted red peppers, feta cheese, and some lemon juice, garlic, and a little bit of olive oil.

Brown rice is better, no question, but what she has is white rice. 

If you want Greek style flavor, the traditional seasoning is dry oregano.  I'd just toss it with some salt & pepper and the oregano and heat it up.  A drizzle of olive oil, if you can afford the calories, would be delicious.

Or you could make a pilaf.  Put some orzo pasta in a pan with a little olive oil and toast until golden, being careful not to get too brown. You could cook some minced onion along with it if you want. Add some broth and seasonings and cook, then toss it with the white rice you have on hand.  Add some golden raisins and slivered almonds to make it special.

If rice is so bad why is a staple to asian diets. I udnerstnad brown is FAR better, but i wouldnt call it evil Esp if its a low GI rice, like basmati or doongara.

 I find it very filling when i do have it and love the taste
I second the pilaf, just use lots of veggies
Or stuff it in a capsicum and bake (with mushrooms, onions, protein in tehre too etc)

It's a staple because it's inexpensive and filling.

At some point you just need food for energy. White rice contains lots of energy and it's not high in saturated fat or anything nasty so it's not evil.

p.s. I eat both white rice and brown rice.

I have tried brown rice, and hated it.  I would rather do without.  However, I would like to thank everyone for their contributions, I kind of incorporated all of the ideas, and it turned out great!

I am sure if we wait a day or two, there will be a post about brown vs. white rice.  I would like to add that throughout my dieting strife's and struggles, I have always lost weight eating white rice.

ps-I really, really get tired of the "white rice is bad" theory.  From my personal trials, and experience, I think it is a load of crap.  1,000,000 Japanese people can't be wrong.

White rice and brown rice are the same thing - it all starts off as brown rice and what they do to make it white is strip off the bran that covers the rice.

The reason they have done this for centuries is that brown rice goes bad faster than white so for centuries villages harvested it with the intention of it lasting longer.

The benefit from eating brown rice is caused by the fiber slowing down the absorption of carbohydrates. This will help tame the blood-sugar roller coaster that can happen from a high sugar-low fiber meal.

That said, if you're getting 25g of fibre a day and can't stomach brown rice then don't worry about it. Losing weight is about calories in/calories out and finding out what works best for you.
