Recipe Ingredients for Green Beans with Tomatoes

1 pound green beans
1/4 cup vegetable broth
1/4 cup chopped red onion
2 cloves garlic, minced
3 tomatoes, diced
1/4 cup chopped fresh basil
1 salt and pepper to taste

Recipe Directions for Green Beans with Tomatoes

  1. Trim beans and cut into bite size pieces.

  2. In a large pot, heat vegetable broth and sauté onions and garlic until limp.

  3. Add tomatoes and cook 3 to 6 minutes.

  4. Add beans, sprinkle with salt & pepper to taste, turn the heat to low, cover the pan, and cook until the beans are just tender. Uncover the pan now and then and stir and test for doneness. At the very end stir in the basil.

  5. Serve hot or at room temperature.
