Perfect for a tea party or a green-food themed party. If you can't find superfine sugar, you can make it by running regular granulated sugar through a blender or food processor until powdery.

Recipe Ingredients for Green Tea Cupcakes

1/2 cup soymilk
3 green tea bags
7/8 cup flour
1/4 cup cocoa powder
5/8 cup superfine sugar
1 1/2 tsp baking powder
1/3 cup Earth Balance
1 1/2 tsp Ener-G egg replacer
2 tbsp water
1/4 tsp vanilla extract

Recipe Directions for Green Tea Cupcakes

  1. Put milk and green tea bags in a jug, cover, and refrigerate for a few hours ? or overnight if possible. Preheat oven to 325.

  2. Put flour, cocoa powder, sugar, baking powder, salt, and butter in electric mixer and beat on slow speed until it is a sandy consistency and everything is combined. (Or, put it in a large bowl and mix by hand with whisk.)

  3. Remove green tea bags from infused milk and combine with egg and vanilla extract. Slowly pour half into the flour mixture, beating well until all the ingredients are well mixed.

  4. Turn mixer up to high speed and beat well to make sure there are no lumps. Turn speed back to medium-slow and slowly pour in the remaining milk mixture, using a rubber spatula to scrape down the sides. Continue mixing for a couple more minutes until mixture is smooth.

  5. Spoon mixture into paper liners until 2/3 full and bake in preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  6. Let cupcakes cool in the tray for a few minutes, then turn out onto wire rack to finish cooling.

  7. Top with vanilla or ?cream cheese? frosting.
