Green Velvet Soup Recipe

Makes 15 servings


low fat, low cal tasty and pretty soup

Ingredients
1 cup yellow onion
1 clove garlic, minced
1 cup celery, chopped
78 grams split peas (3/4 cups dry)
1 tbs bay leaves (2 whole)
12 cups water (or broth)
2 zucchini, (chopped)
3 cups frozen broccoli
3 cups frozen spinach
60 grams instant potato flakes (1cup)
Directions
  1. boil first 5 ingredients in 1/2 of the water for about an hour

  2. add frozen veggies and the rest of water and boil until all are tender and soup has reduced

  3. remove from heat and puree in blender in small batches

  4. stir in potatoes and season to taste
