Grilled Citrus Chicken with Fresh Salsa Recipe

This makes a great dinner entree because it includes protein from the meat, calcium from the dairy, vitamin C from the citrus fruits, and vitamin A and lycopene from the vegetables. The only fat that is present is in the meat and the yogurt. This is also very low in sugar and calories. Healthy and tasty!

Ingredients
1 cup plain yogurt (low or no fat)
1/4 cup minced red onion
2 tbsp chopped cilantro
2 tbsp fresh lime juice
1/4 cup fresh orange juice
16 oz boneless, skinless chicken
1 avocado
4 tomatoes, chopped
1 jalapeno peppers
8 flour tortillas
1 salt and freshly ground black pepper to taste
Directions
  1. For the chicken: mix all the ingrediants except the chicken in a large bowl. Add the chicken to the mixture and coat evenly.

  2. Cover the bowl and refrigerate for at least 4 hours or overnight.

  3. Preheat the grill or broiler.

  4. Remove the chicken from the marinade and discard the marinade.

  5. Sprinke the chicken with salt and pepper.

  6. Place the chicken on the grill or under the broiler and cook until juices run clear, 6-8 minutes per side.

  7. in the meantime, peel, core, and chop the avocado.

  8. Place the avocado in a clean bowl and toss it with the lime juice quickly so that it doesn't discolor.

  9. Add the tomatoes, onions and cilantro.

  10. Add the jalapeno peppers and salt to taste.

  11. Serve the salsa on the top of the chicken with the warm tortillas on the side.
