This makes a great dinner entree because it includes protein from the meat, calcium from the dairy, vitamin C from the citrus fruits, and vitamin A and lycopene from the vegetables. The only fat that is present is in the meat and the yogurt. This is also very low in sugar and calories. Healthy and tasty!
| 1 | cup plain yogurt (low or no fat) |
| 1/4 | cup minced red onion |
| 2 | tbsp chopped cilantro |
| 2 | tbsp fresh lime juice |
| 1/4 | cup fresh orange juice |
| 16 | oz boneless, skinless chicken |
| 1 | avocado |
| 4 | tomatoes, chopped |
| 1 | jalapeno peppers |
| 8 | flour tortillas |
| 1 | salt and freshly ground black pepper to taste |
- For the chicken: mix all the ingrediants except the chicken in a large bowl. Add the chicken to the mixture and coat evenly.
- Cover the bowl and refrigerate for at least 4 hours or overnight.
- Preheat the grill or broiler.
- Remove the chicken from the marinade and discard the marinade.
- Sprinke the chicken with salt and pepper.
- Place the chicken on the grill or under the broiler and cook until juices run clear, 6-8 minutes per side.
- in the meantime, peel, core, and chop the avocado.
- Place the avocado in a clean bowl and toss it with the lime juice quickly so that it doesn't discolor.
- Add the tomatoes, onions and cilantro.
- Add the jalapeno peppers and salt to taste.
- Serve the salsa on the top of the chicken with the warm tortillas on the side.
