Grilled Teriyaki Pork Chops With Peach Salsa

Spring is coming and I feel like grilling!

Grilled Teriyaki Pork Chops With Peach Salsa

4 (6 oz) center cut pork chops

1/4 cup low-sodium soy sauce

3 tbsp minced shallots

2 tbsp dry white wine

2 tbsp fresh lime juice

1 tbsp minced peeled fresh ginger

1 and 1/2 teaspoons brown sugar

2 garlic cloves, minced

- Combine pork and above ingredients into large ziplock bag. Seal and chill in frig for 4 hours. Remove pork and save marinade. (store bought teriyaki sauce can be used, but whats the fun in that?)

- Grill on medium heated grill approx 7 minutes per side or till done. Serve with Peach salsa. Yield four servings.

Peach Salsa---

1 cup diced peach

1/2 cup diced plum

1/4 cup minced shallots

3 tbsp orange juice

2 tbsp minced fresh parsley

1 tsp grated lime rind

2 tbsp fresh lime juice

1 and 1/2 tbsp chopped seeded jalapeno pepper

1 tbsp minced fresh mint

1 tbsp honey

1 tsp minced peeled  fresh ginger

This sounds wonderful. I shall try this over the weekend. Being in England, it will be an expensive dish to make, but I think it will be worth it. I imgine it will look really good too. Thanks for the idea.
