Grilled Veggie Packets

I know that this might be late in the season to post this, but now that I am "mingling" more on these forums, I thought I would just jump right in here.  Smile

I usually have a vegatable garden full of everything you can think of and started making these veggie packs to use up everything.

You will need the following:

2  Yellow Squash, sliced 1/4"

2  Zucchini, sliced 1/4"

1  Green Pepper, sliced into 1/4" strips

1  Red Pepper, sliced into 1/4" strips

1  Vidalia (sweet) onion, sliced into 1/4" strips

2  Large (ripe) tomatos, quarted

Olive Oil, Salt & Pepper, heavy duty aluminum foil

(you can add different herbs, too, depending on what you're serving & your tastes.  I have added fresh rosemary and garlic before and it's tasted wonderful!)

Tear off 4 sheets of foil about 12"-14" squares and divide each listed veggie equally onto each sheet.  Drizzle Olive Oil over each, S&P lightly to taste and wrap each packet so the seams are on top.  If you are using "regular" foil, you may need to "double up" so that you do not punction a hole into them when cooking them.

Toss on on a med-low heated grill (gas or charcoal) and turn every 10-15 minutes.  Total cook time is approximately 30-40 minutes. 

I usually serve this with steamed brown rice and a grilled meat item such as chicken or fish.

We did a lot of packet cooking when we would go camping! I miss it. I'll have to use the oven method, because the mingling of flavors is so wonderful!
