ground buffalo
can i ask how it tastes, is it like ground beef. Ive seen it in the grocery store in the freezer section and even in raw form at a deli...it was very dark colored, almot purple. Just by looking at it i lost my appetite lol. maybe i should buy it as a deterent to eating lol.

It depends on how it's prepared. Frankly, you could measure it like beef because most or a lot of domestic bison has been cross-bred with cattle. It's supposed to be leaner but very similar to beef.
I've had it a lot and it doesn't taste any different than beef. It's darker because it's so lean. Ground beef often has fat mixed in to stretch it or to flavor it.

I would agree that you could probably just consider it 90% lean beef. Bison has a wonderful flavor, stronger than beef but certainly not gamey like elk or deer. I have found that it needs less seasoning because the meat has a fuller flavor than beef.. it can be used for almost every application beef can... though I have gotten bison that was to lean to make hamburger patties out of so you have to add a binder like bread crumbs and an egg or just mix in a little cheap hamburger from the grocery store.... I also get my beef from my aunt who has only grassfed range cattle and I can't make hamburger patties with it either!
Well, there are the bison herds that have a "bit of bull" in them to keep the bison replenished. And then there are beefalo, which is a completely crossed breed and distinct livestock product. They look like really large cattle.
I went to a Buffalo ranch in Wyoming and got to learn all this stuff. I'm really used to game so to me, Bison is really mild.
It depends whether your ground bison is grass-fed or not... this can change the calorie count a lot!
I know that grass-fed bison in a 3.5 ounce serving is roughly 120 calories - be careful though - because the grain-finished bison has about 40 to 50 more calories in a 3.5 serving... While leaner than grain fed beef, I would recommend you find some grass-fed/finished bison

sorry, a little off topic but this post made me think of this.
my friends and i had a debate once at a restaurant about whether bison and buffalo were two different kinds of animals or two names for the same thing.
I think my friend's argument was that they were different - one was endangered and one wasn't. i know it's a really weird thing to argue about but we got so heated i think we had to ask the waitress to clear it up for us. hehe
Buffalo is the incorrect but oft used name for Bison. Real buffalo is an entirely different animal in Africa/elsewhere.
