I see in the grocery Lean ground turkey 8 grams of fat and Extra Lean ground turkey with 1.5 grams of fat. Which turkey do most of you use for recipes? I have tried the 1.5 grams of fat, but found it to be hard to cook with. It comes out to dry and rubbery. I tried to form it in a hamburger and cook it on the stove in pan. It was awfull. Any suggestions?

I use only ground turkey breast. The other ground turkey is all parts of the bird, in some cases including the skin, and it can have more fat than lean ground beef.
The turkey I mentioned above is Ground Turkey Breast. How many grams of fat are in the ground Turkey Breast you use?
I use the extra lean turkey breast. It is actually pretty good in meatballs, burgers, and pasta sauces. When making burgers or meatloaf, I usually add oatmeal that has been soaked in skim milk (sounds gross but is good!) to stretch it out. It's good! :)
