Hey guys. I just took some ground turkey meat out of the freezer to prepare for dinner tonight. Any suggestions on a low carb dinner? Usually we'd have it on spaghetti, but I'm trying to keep my carbs down. Only thing I could think of is some type of taco salad. Any other ideas?

someone posted this turkey chili the other day. sorry, i don't remember who it was---just copied it into my "eat right" folder!  how about that?  might be good with some whole grain baked, low salt, corn chips, (only a few for you, of course!).

Turkey Chili

Ingredients
2T vegetable oil (I used garlic spray instead)
3 OZ diced onions
3 OZ diced celery
3 OZ diced peppers
1 T roasted garlic (I used diced from a jar)
1 (20 oz) ground turkey (I used ground turkey breast)
1 (1.25oz packet of chili seasoning mix
1 (16 oz) can chili beans (undrained)
1 (10 oz) can milder diced tomatoes & green chiles (undrained)
1 (8 oz) can tomato sauce

Preheat large saucepan on medium high 2-3 min. Spray pan, add diced veggies & garlic cook until well browned ( 5 min).Rduce heat to medium and brown ground turkey about 6 min, until crumbles.
Stir in remaining ingredients. Bring to boil, reduce heat to low & simmer for 10 minutes or so. Stirring occasionally, until good and hot.

We loved this. You can use hot or mild chili seasoning, your choice.
Got this recipe from Publix's(www.publix.com/aprons). They have some great low calorie recipes that are quick and easy to prepare.

Here's a main dish soup that I have made and I liked it a lot--it's from our Curves newsletter in Feb. (They omitted the amount of onion, so use your best judgment on that!)

Turkey Rice Meatball Soup
1 lb ground turkey
1/4 c breadcrumbs
1 egg
1/4 c grated Parmesan
2 Tbsp chopped parsley
1 1/2 t salt (divided)
1/2 tsp pepper (divided)
1 Tbsp canola oil
1 c shredded carrots
1/2 tsp curry powder
4 cans (14.5 oz) reduced sodium chicken broth
2 c cooked rice
1 9 oz pkg frozen cut green beans

Directions: In a large bowl combine turkey, breadcrumbs, egg, cheese, parsley, 1 tsp salt, and 1/4 tsp pepper. Shape into 24 balls. In a large pot, heat oil over med-high heat. Add meatballs; cook, turning occcasionally, until browned, 5-6 minutes. With a slotted spoon, remove meatballs from pot. Add to pot, carrots, onion, curry powder, and remaining salt and pepper. Cook, stirring occasionally, until carrots are soft, 3 minutes. Add broth, bring to a boil. Reduce heat to med and add meatballs; simmer 15 minutes. Add rice and beans and heat through. 3-5 minutes. 12 servings

Well, you've already made your dinner but here's what I do:

Turkey burritos with salsa, jalapeno, tomato and avocado. You could add beans too. There are a bunch of tortillas out there that are low-carb and low-calorie. Definitely much lower-everything than noodles! I use La Tortilla Factory 8" whole wheat tortillas, 80 calories, 19g (6%) carbs.

I was so sad when I found out how many calories/carbs are in noodles :(
I use ground turkey several times a week.  I make tacos, burgers and stuffed bell peppers.  Some times brown rice w/ veggies and ground turkey and cayenne and garlic. 
So you've probably already have dinner, but we have turkey burgers, I think that's low carb (depending on the bun)

But we take the ground turkey and season it, and then add some Fantastic Foods Nature Burger to it, and it's quite delicious.
mmm turkey burger shred some onion and garlic into it mix in some spinich and a little feta cheese or anything the possibilities are endless yumm
slightly curried turkey!  you can have it on brown rice, or ramen noodles, or if you're trying to cut back on that, lo-cal wraps. 

defreze, add as little oil as you can stand in the pan, add minced garlic and onion.  fry a little and add ginger and spices (cumin, corriander, garlic powder, paprika, garam masala if you have it, salt, cayenne pepper, and curry powder!) stir until you can smell it, and then add the ground meat and a handful of tomatoes (or a little bit of tomato paste, or just plain ketchup if you like ketchup.  anything tomatoey will do).  cook till it's done :)

i never measure the spices.  just add what you think you'll like and then when the meat is cooked, taste and adjust.  it's really hard to go wrong. 
I make turkey burgers!

i add 2 egg whites, a handful of breadcrumbs, some dried herbs (parsely or sage work well), salt and pepper, and a splash of lemon juice. Makes about 4 burgers, and i usually top with a small slice of colby-jack cheese. dont even really need a bun, they are so yummmmy!
