Guilt free pumpkin soup!

I make this and freeze the leftover into individual portions.

1 x butternut pumpkin

6 x carrots

1 x sweet potato

1 x brown onion

canola spray

 

1. Spray saucepan with canola spray, dice and saute onion.

2. Peel and chop remaining vegetables into chunks.

3. Fill saucepan with vegetables.

4. Add enough water so it reaches the level of the vegetables.

5. Bring to the boil. Leave lid of saucepan. Mash vegetables as they cook and let water evaporate.

6. You may like to adjust the consistency of the soup by adding extra water, fat free milk, light sour cream etc... but i usually just use water.

7. Add salt and pepper to taste. Yum!

I haven't recipe analysed this one, but I'm guessing it would be super low calorie.

that sounds good =) but the title of this post made me laugh
"guilt free pumpkin soup"
i never associated pumpkin soup with guilt ;)

then again i'm 13 so thats a good thing
