Halloumi
Anyone have any suggestions on how to eat this cheese?
Today I had it grilled in a pita along with sauteed onions, mushrooms, tomatoes and hot sauce.

I haven't actually ever had it, but I've heard that it is really good grilled (as you've done) or pan-fried. I've had this recipe by Bill Granger (http://www.chow.com/recipes/10081) bookmarked for a while; it is for a Greek Salad with Pan-Fried Haloumi. I suppose a Cypriot nationalist might take issue with the name, but the recipe sounded simple and yummy and Bill Granger's advice is usually spot-on.
