Hard-boiled Egg and Spicy Hummus Sandwich
4 egg whites -- 60 calories
2 tbs hummus -- 50 calories
2 slices any "light" bread -- 90 calories
Salt optional
It's as simple as hard boiling the eggs and separating the yolks, toasting the bread, and arranging the rest how you like it. :) I used spicy three-pepper hummus, but I'm sure any kind would be good. I didn't realize how delicious this combination would be until I tried it due to a somewhat bare fridge. I really miss my greasy egg-ham-cheese breakfast sandwiches so is was an interesting alternative to that...and only 200 calories! It is VERY filling.
Maybe this is a really "obvious" recipe to some, but it wasn't to me! And I'm sure this will become a "regular" for me so I hope at least someone will feel the same... enjoy!

What a great idea! I do love both hummus and egg salad, but it would not have occurred to me to combine them. Serving it in a pita or in a wrap (depending on the size) would save even more calories. Try adding tomatoes and/or cucumbers chopped or lettuce, parsley, cilantro, peppers, greek olives, whatever you have. . . for extra flavor or crunch.
I tried this over the weekend, but used two whole hard boiled eggs. Used Trader Joe's chipotle hummus, and added a little bit of salsa and cilantro, then stuffed it in a pita pocket - incredibly good.

Thanks for the recipe, my kitchen-aid meat grinder supposedly works for hummus, been meaning to trry that out. I typically use my vita-mix but cleaning it out afterward is a pain....
As far as not using the yolks, it that simply for texture or to spare calories?

For a BIGGER sammich, you can add steamed cauliflower and dump it all in a pita. All that white and I'd probably want to add some green, so some spinach? I get cauliflower and potato pita sandwiches from the cafe on campus, very good.
