Hard Boiled Eggs?

Quesstion!!

I have a dozen eggs that I am boiling; I hardly ever boil eggs, but I thought that since I've been too lazy to cook eggs in the morning, I could grab some hard boiled eggs on-the-go style and still get some needed protein.

My question is, besides eating hard-bioled eggs plain, is there anything fun I could do with them? Recipe wise?

Just thought I would ask since I don't have any ideas!

I have some weird hard boiled egg combos that may sound gross but they are truely delicious and very healthy!!!

- Hard Boiled Eggs with Sauteed Onions

- Hard Boiled Eggs with Canned Sardines in Olive Oil

- Hard Boiled Eggs with Anchovies, Olives & Onions

- Hard Boiled Eggs with Sauteed Spinach, Onions & Bell Peppers

- Hard Boiled Eggs with Canned Tuna or Salmon 

- Hard Boiled Eggs with Sun Dried Tomatoes and Spinach

- Hard Boiled Eggs with Green Beans 

*Personally I absolutely love Nicioise Salads with consists of: Hard Boiled Eggs, Bibb lettuce, Olives, Artichokes, Tuna, Peppers, Onions, Green Beans, Scallions - MMMM!!! 

For lunch tomorrow I'm going to to try having a hard boiled egg cut up and mixed with hummus on toast.  I think it will either be horrible or wonderful.  We shall see..

I love love love hard boiled eggs sliced up in a salad.

Salt & Pepper are all I ever need, good stuff!

Yep, just some salt or chopped up in a salad are my favorite ways to eat them.

chopped up in salad
chopped up in cheese sauce on toast
devilled eggs
egg salad sandwiches
by themselves

a tip: hard boil eggs when they're a little old (approaching or even past the bb date) and they will peel so easily!

If you're feeling really adventurous, make deviled eggs...cut them in half, mix the yolks with a bit of mustard, mayonaise, paprika, diced green onions, etc.

A traditional use is in a Fish Pie.   Poach white fish in milk... remove the fish to an ovenproof dish....make a thick white parsley sauce with the liquid.... flake the fish, season well and add halved hard-boiled eggs and some prawns/shrimps.... add sauce..... over the top, spread over some mashed potato and ruffle the surface with a fork.... bake until golden!

I pop them in iced water the instant they are done boiling-- this helps to avoid that green tinge and helps them peel too. Also, helpful is to not overcook them. My kids love to grab hard boiled eggs for breakfasts, snacks and to supplement their lunch bag. I do a whole bunch at once and leave them handy in a bowl so they know those are the done ones.

As far as unique ways to eat the eggs, my ex would buy a large jar of pickles and when the pickles were gone, he would reserve the juice and would add several peeled hard boiled eggs to the jar-- in a few days you've got pickled eggs. Other than that, I can think to chop them up and make good old fashioned egg salad.

 

yesterday i made an egg salad out of one hard boiled egg with a tiny bit of mayo and pepper...and then used it as a dip for celery.  surprisingly good...

Boil for two minutes and then turn off the heat to let them finish cooking. It prevents the yolks from turning that awful, unappetizing green color.

I think for breakfast I am going to try an egg or two chopped up and put on a wheat pita bread with a slice of low-fat cheese, and maybe some salsa. And maybe a piece of soy sausage or bacon to go with it. I am really excited about breakfast now!

I peel and cut my boiled egg in half.  Then I make a half of sandwich with toasted wheat bread.  Yummy for breakfast.

Ahh some wonderful ideas!!

Chop them up and add some hummus + paprika.   So good on toast!

That's funny, I heard just the opposite. You boil them for a certain time and then put them immediately in ice water.  2 minutes may not be enough time if you live in a really high altitude. Where I live it takes a good 20 minutes just to get water to boil.

here's another vote for hummus and hard-boiled eggs on a sandwich! (toasted bread = even better)

Layer boiled potatoes, boiled green beans, canned tuna, hard boiled eggs, and onions sauteed in just a dab of olive oil.  Delish!
