Having a hard time cooking for one

Eating out is definatley my downfall. When I have all the temptation listed on a beautiful menu in front of me I find it hard to hold back. So I have been doing most of my eating at home and buying only heathy things.

My problem now is that I have a hard time cooking for one. And even when I cut a recipe down to a single serving it either doesn't come out to enough food or I cook too much.

I am not into left overs usually (I will occassionally eat some left over pasta) because I find either chicken or steak or pork gets way too dry in the microwave.

Any suggestions? Any great simple recipes for one?

I dunno, I love leftovers so I usually aim to make more than we'll eat.  Maybe it's the kind of leftovers you are eating...for example, I agree that chicken, steak and pork get too dry in the microwave, so with those, i'll cut them up for lunch the next day and put them on top of a salad, cold.  Or for chicken, I'll chop it up and add mayo for a chicken salad sandwich.  I like to focus on making foods that will reheat well - chili is a big favorite, or a bean curry, even stir fry re heats well. 

For cooking for one, maybe just weigh out what you are going to eat...like with chicken/steak/pork, before hand cut a 3-4oz piece and only cook that.  Then make your sides and if you have too little food, fill up with a salad that you have pre cut up in the fridge.

Thanks. I guess it is simply the type of leftovers that I don't like to reheat. Thanks for the advice.

I too have a problem since I live alone although I'm not averse to leftovers but it's hard to find recipes for small yields of 1-2 servings.

I just ordered this book (link below).  It is published by eating well magazine.

It got good reviews by readers.  I know it is for two but I figured it was better than the usual recipes that serve 4-8. 

If you go to Amazon and type "cooking for one" you'll find several cookbooks for that purpose.  Make sure you read the one and two star reviews as well as the good ones.  Some people don't need incredibly flavorful food to be satisfied.  I do.  I'll eat more (hunting) from not being satisfied if I don't get good flavor.

To keep meats (or anything for that matter) from getting dry when I microwave I:

Place meat in a microwaveable bowl or container (not styrofoam!).

Wet a paper towel, squeeze a bit of water out.

Straighten the towel back out and place over the top of the bowl, and microwave in 1 minute increments.

It works every time and this method works wonders with rice.
