Any suggestions for someone who hates to eat veggies? I even hate salads. The only veggies I like are potatoes, corn, green beans, and mushrooms on pizza! I will eat them in a sauce or something but not raw or just by themselves! Im trying to get healthy and be an example to my 16 month old and I will also be turning 30 next month.

You sound like perfect candidates for Jessica Seinfeld's book Deceptively Delicious. Being vegetarian, I haven't tried it myself, but it looked great on Oprah. Good Luck!
I have veggies too. A lot of them anyway. The only ones I'll eat of my own free will are green beans, corn, sweet potatoes, potatoes, broccoli, zucchini, okra, artichoke and collards. Some like tomatoes, carrots, onion, celery, or bell pepper I might eat if they are cooked to death and overwhelmed with other flavors. I don't even like onion rings. I can't even get down lettuce or cucumber. Zucchini, broccoli, and collards are fairly recent additions to the "edible" list.
Anyway, my fav way to eat veggies is stir fry with some terriyaki sauce or in a soup or gumbo. Favorite is a relative term. I still don't enjoy veggies really...except maybe sweet potatoes with brown sugar and cinnamon. I still can't even eat the vegetables that I like raw. Also most veggies taste best if they are cooked till tender but not till mushy.
I would die without my veggies!! (especially since I'm a vegetarian!) LOL!
Saute them in a little olive oil with different spices and herbs. Sauteed red bell peppers, shallots, onions, celery, kale, leeks...so tasty! Oh and roasted veggies are the best!
This is my favorite soup I make once a week, easy way to get some veggies:
Peel and chop 1-2 sweet potatos (1 inch chunks) and toss in 1 tablespoon of olive oil, salt and pepper. Spread them out in a roasting pan. 1 red onion, sliced and spread out over the potatoes. 2 red bell peppers, deseeded and chopped in half...lay them face down over the onions. Roast for 40 minutes on 375F. Put all the veggies in a food processor and slowly add 2 cups of veggie stock until its soupy. Add some cayenne pepper for a little kick!
Best soup ever! And if you don't have a food processor, do it in 2 batches with a blender.
I also browse the cookbook section at a book store for loads of ideas on how to prepare different veggies, especially helpful with spices and herbs.

You may also want to try mashing cauliflower - as a substitute for mashed potatoes. Just steam the cauliflower until it's soft, add some milk and a bit of sharp cheddar and mash it all together. If you're not crazy about the taste, you can make it 50/50 with real mashed potatos to hide the flavor a bit.
What about tomatos? Do you like those? You could always make a homemade salsa and put that in a taco or burrito or something....

Veggies in sauce is a great start. Cooked or canned tomatoes have benefits that raw tomatoes don't. Try adding mushrooms, mashed cauliflower, broccoli, asparagus, etc. You can also add veggies to lasagna - my favorite is penne with tomato sauce, garlic, oregano, frozen spinach, and cheese!
Eating the right veggies with the right things helps. Some famous pairings are shrimp with pasta paired with peas or asparagus. Also, egg plant with chicken or pasta and a bit of parmesan. If you like veggies with dip, you can season cottage cheese with garlic, chili powder, dill weed, and other spices for a high-protein, low fat dip.
Many raw veggies, I will admit, taste like crap. Try steaming, baking, sauteeing, or grilling veggies. When baking veggies, sprinkle with seasoning and or drizzle with olive oil. Some awesome veggies to grill are mushrooms, bell peppers, yellow squash, corn on the cob, halved tomatoes, and asparagus. I have yet to try more... :P
I just learned that corn is not a vegetable. It is actually a grain! Sorry to make your list a little shorter, but I thought you may want to know that!
I too once hated veggies!!
I figured veggies with sauce were better than no veggies at all so I started with JUST ENOUGH to get me to get them down then gradually decreased the sauce each time I got used to the amount. Now I eat some veggies completely sauce free.
I went through the same thing with oatmeal. I couldn't stand it. I kept trying different cooking methods and additions until, believe it or not, now I CRAVE it. I can hardly believe it myself but it's true.
My favorite veggie seasoning is Mrs. Dash!

maybe a diet like the atkins would be helpful to you. But instead of all the high fat meats do grilled chicken, fish, andhardboiled eggs. Watermelon, cantaloupe, and berries are all on the plan. I lost 30lbs and still going. I feel really good I had ALOT of stomach problems before and since i started this i have not had one problem. Take your vitamins and stay away from sugar.
I love the fact that you're trying and willing to learn. Keeping an open mind about your diet will take you far in the long run.
Do you like spaghetti? Spaghetti sauce can hide a ton of veggies. You can mince carrots very finely with a food processor and then toss them in the sauce. The carrots will give the sauce a great flavor, but you won't have the texture or taste of plain carrots.
Meat loaf: Mince onions, green peppers and broccoli with the food processor and mix into your meat mixture.
Make lasagna using thick slices of zucchini instead of noodles. This works great.
Keep trying new things a little at a time. If you don't like it, but it doesn't make you gag, keep it on your list of possibilities. Next time cook it a different way or cook it a little more or cook it a little less. See if it's the texture that bugs you more than the flavor.
Allow your taste buds to change. Don't keep a rigid mindset on what you like and dislike.
I do love spaghetti and thats mainly where my veggies come from. I am going to try to make dinner this weekend and include some new veggies. My husband loves vegetables and I always feel like I'm depriving him of them because I dislike them so much! My 16 month old will eat them sometimes, but I always offer them to her.

I am currently in the process of inventing something for people who HATE veggies! I was wondering if this sounds like something you, or anyone else on here would WANT to use.
It is lots of powdered vegetables. In their natural form, no synthetics.
In it, I have added, aspearagus, spinach, beets, carrots, sweet potaoes, squash, mustard greens, brocolli, and many many others.
As well as some added protein, fiber, yeast, idodine and other trace minerals.
I have fed this to my family for over a year, and we don't get sick nearly as much as we used to and have a lot more energy, and we can REALLY FEEL the difference when we don't take it.
It is sprinkled on food or mixed in sauces (ketchup/mayo) or in stews and soups or casseroles on homemade or takeout food. It's really easy. Use as you would salt (but a little more heavy handed)
And the best part- you can't taste it! I even put it in the Jelly of my kids PB & J and they have NO IDEA!

GARLIC MAKES ALL VEGETABLES DELICIOUS!!! I wish I could make you some of my veggie concoctions because they are great! (not to brag or anything... ha ha)
Definitely eat plenty of fruits and find other foods to eat that are high in the vitamins and antioxidants that vegetables would provide. You might like this low calorie snack list of healthier choices, many full of vitamins and minerals. Also, you should consider taking a multivitamin every day. Hope that helps! :)
So what is it about green beans that makes you like them when you hate all other vegetables? Having to hide the vegetables in food is just as bad an example for your toddler as not eating them at all. Hide extras by all means, but make sure that she sees you eating 'real' recognisable vegetables on a regular basis. If that means having a cup of green beans every single dinnertime because you can't stomach anything else, then do it. And try some different vegetables.

Figure out what type of eater you are and you might just find the answer to permanent weight loss.
