How about angel food cake? You could use low-fat Cool Whip as frosting or top with strawberries. Or, try one of the reduced fat cake mixes, and you can also use Eggbeaters or another egg substitute instead of real eggs, and applesauce or pumpkin in place of the oil.

I always use applesauce instead of oil for the boxed cake mixes, however they are still really high in sugar, and the frosting is horrible.

My boyfriend loves this cake: http://www.fitnessmagazine.com/recipe/dessert s/cassata-cake/

Vitacakes from vitalicous http://www.vitalicious.com/store-vitacakes.ht ml

You can order one online. They come in a week, or same week if you order before a certain day (East coast: Order by 2pm on Wed get it that Friday).

I love their chocolate brownies, muffins, and muffin tops. But haven't tried the cakes. I'm sure i would like them.

I sent my mom one of the cakes for her birthday. She and her husband enjoyed it. She's dieting and He could actually eat it cause it was low in sugar (He's has to watch his sugar intake hardcore).

Other then that. I would check out http://www.hungry-girl.com/ they have great low calorie recipes.

I also heared about the diet coke muffins, so maybe you can find one to make a cake.

Hope it helped

By "healthy" do you mean low-fat, low-cal....

...or actually holds substantial amounts of good-for-you ingredients?  I mean, marshmallows are low-fat and low-cal but I wouldn't consider them healthy

Tongue out

On my birthday I'd rather eat a really sinful but small piece of really good chocolate cake than a big piece of "healthy" cake.  I'd give up some other thing that day just to have my cake.  It's once a year and it's MY day.
