I commute into the city 5 days a week and it's hard for me to eat healthy in the morning. What are some options for breakfast that are healthy, affordable, quick to prepare, and will hold me over until lunch?
Answer
Pack your breakfast the night before and store it in the fridge. Choose easy foods from each food group: Grains can be muffins you bake and freeze, rice cakes or whole grain crackers, dry cereal, or bread for a sandwich; Dairy can be cheese, yogurt, or milk in a grown-up sippy cup; Meat can be nuts, nut butters on your crackers, a hard boiled egg, or the filling for a sandwich; Fruit is easy, either fresh, dried or canned. Or you can grab a can of Slim Fast, Ensure or another meal replacement. A breakfast bar is an option, although they are not all equal. Look for 5 g of fiber, 5 g of protein, 25% of the DV for calcium and no more than 15 g of sugar. This Atkins Advantage Peanut Butter Granola Bar is an example.
