What are the health benefits of eating cactus?

Nopales, also called prickly pear cactus, are a high nutrient-density food. For very few calories, they are loaded with fiber, protein and a variety of vitamins and minerals, but have very little sodium and no fat.  Nopales are found in Mexican markets and in cans or jars in the grocery store. They are the cactus pads (although the prickly "pear" fruit of the cactus is eaten too.)  To prepare fresh nopales, remove the spines and eyes from the cactus pad with a vegetable peeler and peel or trim any discolored areas. Nopales taste best when grilled until slightly brown and then sliced into strips and tossed with oil and vinegar or added to mixed dishes like omelets and tacos.
