is there a healthy cake recipe for one person?

I love cakes and I keep looking for healthy cake recipes. the problem is I can't make 6 or 12 servings because I am afraid that I might eat  the entire thing.

Just curious if anyone has a cake recipe that makes one or two servings?? something simple that doesn't have too many ingredients..

I wish I could help you, but I've given up on trying to make "diet" cakes.  I now have a policy of eating 3 bites of any dessert, no matter how rich, then I throw out the rest, or share it with somebody.  If I bake, I divide it into small servings and freeze them.  Sometimes you just need a taste of good cake!

ok. that is fine with me. If  you have a cake recipe that makes ONE serving, please let me know. I just don't freeze .. i know myself.

Divide the recipe by two, so you're using half the ingredient amounts directed. Because they're in ramekins, you've got small servings individually portioned.

It's how to make a single serving of the famous diet coke cake.  Of course it's not particularly healthy, but it is lower in calories than regular cake baked from a mix.

I never did try it.  See the last post in the thread for other cake suggestions.

I make cake in a mug when i just want a serving

In a mug mix a rounded tsp margerine with 2 tsp sugar (i suppose you could use sweetner if you wanted, but i'm all for eating "real" food)

then stir in a tbsp flour and a tsp cocoa powder and enough milk to make it a nice cake mixture consistency

Microwave on high in the mug for about a minue (keep close eye on it though, somethimes it takes less

It ends up coming out as sort of a hot borwnie/cake consistency.

Whilst it may not be all that healthy, it is a small serving and is comforting and gooey to eat, kicking my cake cravings out of the window :)

Dondons, can I make this mix without the flour? I have all the ingredients but not the flour. Can I replace it with something else?

erm....perhaps oats? or ground almonds? They might have the same sort of binding consistency as flour. Or maybe just use more cocoa powder? (though that would make it reeeeally chocolatey)

I make a single serving of the famous "diet coke cake" all the time.  You take 1/12 package of boxed cake mix (43 grams-heres where a food scale comes in handy) and mix in 2 Tbs. any flavor diet pop.  I mix this in a small ramikin/custard dish and microwave on high for 45-50 seconds.  A dollop of fat free cool whip and voila!

It's doesn't exactly taste the best, kinda stryofoamy, but it's healthy and super easy.

 

1 scoop protein powder (choc or vanilla)

1 tsp baking powder

add water slowly until goey and mixed in

microwave for aprox 1 minute

 


It can be kinda bland tasting, so some people add things like peanut butter, syrup, or sweeteners. It's also kinda dry so after so people put milk, ice cream or other toppings.  I have a few a day.

One serving of the "diet coke cake" is 180 calories not including any toppings.

Cake In A Mug

(My mom got this in an email, so I don't know where to credit.)

 

Ingredients

4 tbsp. flour
4 tbsp. splenda (or real sugar, but it increases calories)
2 tbsp. unsweetened cocoa
3 tbsp. skim milk
3 tbsp. applesauce (or yogurt)
1/4 cup liquid egg substitute
few drops vanilla extract
1/8 tsp. baking powder

Directions

Mix all dry ingredients in a small bowl. Stir in egg substitute and mix well. Add the rest of the wet ingredients along with the vanilla. Microwave 2-3 minutes, keeping an eye on it. It'll rise over the top, but that's normal. Don't bake it too long or it will come out rock hard.

It's roughly 275 calories and 4 grams of fat, give or take... without frosting.
