Healthy Jalapeno Poppers

I'm sure someone may have already posted this recipe, but I would like to reinforce how delicious it is.

We grew jalapenos in our garden this year and got about 20 good ones.  So here is what we made last night:

- 20 fresh jalapenos

- Fat free cream cheese

- egg whites

- bread crumbs

Turn the oven to either 375 or 400, cut open the jalapenos the long way.  Pull out the seeds and rinse.  Fill the inside of the peppers with fat-free cream cheese (it doesn't take much at all to fill them- wayyyy less than one serving of 2 tbsp) and then stick 'em back together.  Dip into egg whites and then roll in the bread crumbs.  Put on a Pam'd cookie sheet and bake for about 20 minutes.

They are crispy and delicious!  And I estimated them to be approx. 20 calories per popper.

yum....This sound delicious AND devious.  You could also use a hungrygirl tip and grind fiber one cereal for all or part of the bread crumbs.  I have done this myself with her unfried green tomato recipe and it is delicious!  She does the same with onion rings.
