Healthy Meals In Under 10 Minutes
This evening I made myself http://caloriecount.about.com/pan-fried-rump- steak-sauteed-recipe-r150410 this simple supper and realised afterwards that it had taken well under 10 minutes from getting out the chopping board to sitting at the table and eating it. No cheating, no fake food, no dodgy ingredients and not even the microwave ... just good honest grub!

This is more than 10 minutes total, but it's a fix it, dump it in the pan and forget it for 20 minutes meal.
Brown a piece of seasoned chicken in an 8" non stick pan. When the chicken is golden, add 1/2 cup brown rice and stir it to lightly toast the rice. Pour in 1 1/4 cups of chicken or vegetable broth. Bring to a boil, turn down the heat and cover. 10 mintues later add a cup of broccoli florettes and carrot slices. Put the lid back on and let it simmer for 10 more minutes. When it's done you have a balanced, generous meal for 1.
Can of chickpeas, drained. Lemon juice, tsp of garlic, tbsp of olive oil, touch of cumin, salt and pepper, 1/2-1/4 cup of water or chicken stock (depending on how runny you want it). I add italian parsley as well.
Blend in blender. Heat in pot.
I usually divide the recipe into three and have dinner, lunch and dinner. Its incredibly filling!
One cup of frozen mixed vegetables in a frypan with some water. Boil it till the water's all gone and then scramble in some eggs or egg-whites (or whatever combination thereof makes you happy - I like 1 egg plus 2 whites). Put it in a bowl and top it with some salsa for dinner in five minutes flat.
Or else nuke the veggies in a bowl and then stir in a wedge of laughing cow.
I cut up zucchini, throw it in a frying pan coated with cooking spray and some minced garlic (from a jar), sautee it a bit, and then throw in egg whites and turmeric and a tbsp of soy sauce. Yummm.
God, I freakin' love egg whites! I was feeling lazy tonight, so I scambled half a cup with one Laughing Cow Light wedge (plain swiss flavor), and then topped it off with jalepenos (basically no calories) and spicy smoky peach salsa from Trader Joe's, and had a side of 12 spears of asparagus (from frozen, also from Trader Joe's). Whole thing took like 4 minutes to make and was 133 calories, so I got to stuff myself for dessert. :)
I like all sorts of stir-frys. They are usually very quick to make, need very little oil, and i like to put many vegetables. This means about 10-15 minutes of work, chopping included, but tastes delicious!

Fast Vegetarian Chili
Dump into a pot
a can of pinto beans, drained or not
a jar of salsa
some frozen chopped onions and green peppers (optional)
Simmer for about 5 minutes or until the onions and peppers are cooked, then go get a fork.
Put a bag of steam-fresh vegetables in the microwave. While they are steaming, cook a vegetarian (or not) breaded chick'n patty (or chicken patty) on a skillet with some Pam. Once cooked, chop it up into bite-sized pieces. Pour vegetables into a bowl and top with chick'n bites, some tomato sauce, and a few shakes of parmesan.
Boiled shrimp is my go-to when I need a meal fast. That and a bagged salad, some frozen veggies and I'm done.
Oatmeal is my other fast comfort dinner.
Think I could substutite collared greens for cabbage? And anyone know what courgatte is? I have never herad of that
Greek Meatballs:
In a large bowl, combine 1 lb. lean ground turkey, 1/2 C dry bread crumbs, 1/3 C reduced fat crumbled feta cheese, 3/4 C finely chopped red onion, 2 Tbsp lemon juice, 1 tsp dried dill, and 1 egg white, lightly beaten. Mix well and form into meatballs. (Smaller ones cook better, though you can also make burger patties!)
Spray a non-stick skillet with cooking spray, and cook over medium heat, turning, until brown and cooked through.
Serve with your favorite veggies. We had these tonight with some quickly steamed spinach top with a tiny sprinkle of feta and some red and yellow bell pepper strips.
I promise it is worth a try - I am not a fan of ground turkey, but this is GOOD! Makes 16 - 24 meatballs or 4-5 large burgers. My husband likens it to his favorite meatloaf, and has no idea that it is coming in well under 400 calories for a hefty serving of meatballs!

I believe courgette is what they call zucchini or zucchini like squash in Great Britain. I've also heard it called vegetable marrow.
Substituting depends on the recipe. What are you making that calls for cabbage? Collard greens are in the same family as cabbage, I think, but the taste is different. I use collards and kale interchangeably, but I love my cabbage.

The answer to your first question is no - totally different taste, texture, and color.
Second question - courgette is the british (and french) word for zucchini squash
