anyone has any healthier version of pancakes

Low Carb Protein Pancakes

1/2 cup egg whites

1 scoop soy protein powder (unflavored)

1/3 cup wheat bran

1/4 cup canned pumpkin *optional*

1/4 tsp baking powder

1/4 cinnamon

stevia to taste

combine ingredients, and cook like a normal pancake.. top with SF syrup, yogurt, fruit etc

less then 200 calories, 40 grams protein, 10 grams carbs, 6 grams fiber, 2 grams fat (without pumpkin... with pumpkin adds 25 calories, 5 grams carbs, 2 grams fiber)

 

I don't make them very often and use Bisquick Heart Healthy mix.  I add 1/2 cup whole wheat flour and some oat bran to the batter, thinning it with more skim milk if needed.  I use egg beaters or separated, beaten egg whites.  If you whip the egg whites and fold them into the batter it's lighter and fluffier.

I add a lot of blueberries to the batter.

I'm sure there are lots of much healthier versions.  Try using the main search engine - select Recipes from the pull down list, then type in healthy pancakes and then click on search.  You should get quite a list.

You basically use applesauce in place of the oil...it really lowers the calories.  The banana gives it a really nice flavor (and causes me to use less syrup=less calories!).  Also, the whole wheat flour is better for you than using all white flour!

I often make these pancakes just for me, so tweak the amounts to your liking...

60g buckwheat flour

1/2 banana

Dash of vanilla extract

Dash of cinnamon

1 tbsp. water

Dash of baking powder

Sprinkle of salt

Sprinkle of Stevia powder (optional)

Mix the dry ingredients together apart from the banana. Mash the banana up with the water and vanilla extract. Combine the wet and dry mixtures and whisk. There will be lumps, that's fine. Pour mixture onto pre-heated skillet and cook as desired. You can add blueberries, chopped apples, cocoa powder or whatever you want to the recipe :) These are very heavy and not super sweet, but I prefer them that way.

G's Pumpkin Pancakes (Yea, just came up with a name for the pancakes I make every morning for breakfast - ha ha)...

- Roughly 1/2 to 1 cup of pumpkin

- 1/2 cup of egg whites (100% whites)

- 1 tbs cinnamon

- sprinkle stevia to taste

*Cook as you would a pancake, flip when one side is set - enjoy completely guilt free!!!

*Best Drink to go along with = White Tea!

I just started making these, and I love them. 

1 packet of weight control oatmeal from Quaker.  (Lots of different flavors available, so you can mix it up)

2 egg whites

1/4 cup milk (I use unsweetened almond breeze)

Mix it all together and make like a reg. pancake.  It holds together nicely and flips easily.  I usually top with a little sugar free syrup and have some blueberries on the side.
