i honestly eat so much on this holiday.
does anyone have any healthy/low-cal recipes for passover?

someone gave me this one for passover veggie burgers:

PASSOVER VEGETABLE CUTLETS

1 1/4 c. finely chopped cooked green pepper
1 1/4 c. tightly packed raw grated carrots
1 1/4 c. tightly packed chopped raw spinach
3 med. potatoes, boiled & mashed
1 tbsp. grated raw onion
1 tbsp. minced parsley
3 eggs
1 1/2 tsp. salt
1 1/4 c. matzah meal
cooking spray

Mix vegetables, potatoes and parsley. Beat eggs with salt and add vegetables, beating until mixture is well blended and smooth. Stir in matzo meal and let stand for 30 minutes. Form into patties about 3 inches in diameter and brown in pan sprayed with cooking spray.  Makes 8 servings.

I don't have the nutrtional information for this, and I know it's more of a winter recipe, but I love it.

Carrot & Apple Tsimmes

6 carrots, peeled & grated (about 1 1/2 cups)
1 cup hot water
3 apples peeled, cored, and grated
1/4 cup raisins
2 TBS honey or brown sugar
Salt to taste
1 cup orange juice
2 TBS potato starch
1 TBS canola oil

Preheat oven to 350°F. Place the carrots in a saucepan, add the water, and cook, covered, until tender, about 10 minutes. Add the apple wedges during the last 5 minutes of cooking time. Add the raisins, brown sugar, salt, and pepper and mix well.

In a small bowl mix the orange juice and potato starch until smooth. Pour over the carrot-apple mixture in the casserole dish. Brush, spray or drizzle on the canola oil.

Bake for 40 minutes or until the top is golden and the carrots are well cooked.
Perfect for spring!

Roasted Asparagus

Preheat the oven to 425 f

Break off & discard the tough part of the stalks of a pound of aspargus and wash well.  Dry on paper towels.  Toss with 1 tablespoon of olive oil until evenly coated.  Salt and pepper to taste.  Arrange on a baking sheet in a single layer.  Bake for 15 minutes until sizzling and just beginning to brown on the tips.  They should be crisp/tender.  Serve immediately.
Look what I found on About.com!
