So, I was wondering, what are some of your healthy, quick, and easy meal ideas? 

One of my favorites, Steam in the bag veggies sprinkled with low fat feta.  Even better if it is the sun dried tomato and basil low fat feta.  Takes all of 5 min to prepare and fills me up with lots of vitamins, protien, minerals and fiber.

I'd love to here some more yummy ideas:)

For breakfast:

0.5 cups vanilla yogurt

0.75 cups Kashi Go Lean Crunch

banana

apple

2 tbsps raisins

Filling, not too high in calories, and super delicious!!

I'm a simple person so I eat simple things. One of my favorites is chicken spaghetti. Just 4 ounces of chicken grilled in a pan, 1/2 cup of spaghetti sauce, 1 oz of pasta, and 1/2 cup of peas. yum!

another one is just a simple chicken sandwich. 4 oz chicken (100 cals) and light wonder bread buns (80 cals) with some ketchup.

feta and veggies sound super good tho. what's your fave low fat feta? the one I got was from trader joes and SUPER salty.

Here is a recipe that I made up, but it is delicious.  Not sure if all the ingredients will convert as I am Australian (sorry about the metric weights).

Creamy Smoked Salmon Pasta
(serves 2)

100g dry pasta 363 calories
100g smoked salmon 133 calories
50g Philadelphia Cream Cheese Spread (80% less fat) 84 calories
50g Sour Extra Light Cream 80 calories
25g Capers 7 calories
200g Baby Spinach chopped 20 calories
1 cup canned Champignons drained and sliced 30 calories
Lemon juice (1 or 2 tablespoons) 4 calories
Red Onion thinly sliced (to taste) 4 calories
Freshly cracked pepper

Cook pasta, add all other ingredients. Put in the microwave for a few more minutes so everything is hot and melted.  Can also add some Parmesan Cheese over the top as well.


364 calories per serve and it makes a big plateful.
The brand feta I use is ATHENOS, they have regular and low fat in 2 or 3 varieties.

i love feta cheese. low in cals and packed with flavor. that's my kinda food :)

for a "dessert" right now I just ate a gala apple with a 60 cal jello caramel pudding snack. talk about caramel apples. i love that one.

for dinner i had a jenni-o lean turkey patty with weight watchers bun and mustard. it was super good actually.
