healthy soft serve imitation
Last night I got some YUMMY soft serve ice cream at McDonald's, but then after I wanted more (of course). So I made up my own recipe... It's not as good but not bad either, and ridiculously high protein, fat free, and could be sugar-free if you want to use artificial sweetener. The recipe's not precise, sorry, but you can experiment.
I combined 1 c. nonfat dry milk, 3/4 c. (maybe less?) cold water, 2-3 c. ice, a few teaspoons vanilla, and around 1/4 c. sugar in my blender, and blended it really well for a minute or two. (I have a Kitchen Aid so it makes it really smooth.)
It's not quite thick enough to eat out of a cone, but definitely thick enough to eat with a spoon. The dry milk gives it it's malt taste which can't be achieved using regular milk, because the ratio of dry milk to water is a lot less than if you were mixing it up to make milk to drink.
So if you were to use 3 c. combined ice and water and an artificial sweetener, a 1 c. serving has 80 calories, 8 grams of protein, 0 grams of fat, and 30% of your daily calcium. And real sugar adds less than 80 more calories. Soft serve for breakfast anyone? :)
