This evening I'll be making a simple pasta bake with wholemeal penne pasta & a sauce made with reduced plum tomatoes, crushed garlic, onion and basil. Topped with mozzarella and grilled. Served with a green salad and a glass of chianti. Delicious.
Tonight I'm making ratatouille (a combination of roasted eggplant, green peppers, onions, zucchini, tomatoes, garlic, and mushrooms) served over oven-roasted potatoes. A great way to cram in a bunch of veggie when the rest of your day isn't so healthy...

I'm having curried seitan (wheat-meat as they call it, hahah) with wheat couscous, broccoli, green beans, mushrooms, and some fresh pineapple. Yum yum.
Two nights ago I made a random and yummy discovery!
I didn't have much in my house, so I went into my freezer and pulled out some brussel sprouts and shrimp. I boiled the brussel sprouts and then threw them in the frying pan with the shrimp, and added a little oil, Garlic Plus seasoning and some parmesan cheese. It was sooo good and only about 350 calories! (And very satisfying)

My fave is to pan fry ( with spray) some boneless skinless chicken thats been marinaded in BBQ sauce with some hotsauce mixed in.
Add Some lettuce, red pepper, onion and a little low cal ranch or bluecheese dressing .. wrap chicken and veggies in a WW pita .. or a WW tortilla.
Less than 300 cal .. and Sooooooooooo good

Tonight I made a salad with lots of baby greens, 1/2 cup of black beans, 1/4 cup lowfat shredded cheese, and 1/4 cup salsa. It tasted really good! My BF said it needed corn chips, but I didn't think it needed any.
Stuffed peppers....SOOOOO good!
