Something I just threw together that turned out really yummy. Have made with ground turkey (lean), ground beef (extra lean) and ground chicken. Can be made vegetarian by adding one or two more beans like chilli, garbanzo or black beans. Adjust the seasonings as desired or substitute for a low-sodium taco seasoning blend.

Recipe Ingredients for Healthy Taco Salad

6 cups romaine lettuce, thinly shredded
1/4 cup cabbage, thinly shredded
1/2 red bell pepper, diced
1/4 yellow bell pepper, diced
1 medium tomato, seeded and diced
6 scallions, chopped
10 oz kidney beans, rinsed and drained
1 tsp cumin
1 tsp smoked paprika
1 tsp red pepper flakes
1 dash cayenne pepper
1 dash black pepper
1/4 cup Cilantro Creama Dressing (separate recipe)

Recipe Directions for Healthy Taco Salad

  1. Sray a medium skillet generously with cooking spray and heat over medium-high heat. Add meat, cumin, paprika, pepper flakes, cayenne and pepper and brown, breaking up large chunkes.

  2. When meat is nearly done, add beans and stir to combine. Heat throughout.

  3. Meanwhile, chop remaining ingredients and divide among four bowls. Top with meat mixture, salsa, avocado, cheese (if desired) and Cilantro Creama Dressing. Serve with tortilla chips.
