Healthy way to use/eat cottage cheese? Do cheeses freeze well? Anyone pls?
1. For the first time, I bought and tried cottage cheese (5.5% fat) and am just wondering what else i can do with it aside putting in my salads. I liked it.
2. Also, I have this low fat feta cheese( my 3rd or 4th time of purchase), I've opened it but not finished yet and I don't want to throw it away 'cos i'll be away for two wks. Can i freeze it? or its just fine in the fridge for 2 wks?

Dice up a tomato and mix it up with 1/2 cup of cottage cheese. Sprinkle herbs or pepper on top (I like basil, oregano or thyme; fresh chives are really nice too in summer). For 1 cup of cottage cheese, use a bigger tomato or two of the smaller ones.
Other things you can mix in for flavour: a little diced onion or a couple of toasted pine nuts. I wouldn't add salt unless it's no-salt-added cottage cheese. The regular stuff has quite a lot of salt already.
Also, cook 60 g dried pasta (whole wheat is healthier and tastier, but regular works just fine) and put it in your pasta bowl. Add 1/2 cup cottage cheese on top and mix well. Add a sprinkle of fresh ground pepper (if you like pepper).
Both recipes scale up nicely, but I mostly cook for one so these are "for one" quantities.
I've never tried to freeze cheese.
I like crushed pinapple in my cottage cheese. Very ordinary, I know, but I love the taste.

I love cottage cheese, My favourite is in a toasted sandwich with turkey ham slices and bit of mustard.
Or I love using cottage cheese as the cheese for my home made pitta/tortilla(wrap) pizza.....
Feta will be good for 2 weeks in a airtight container, or just keep adding to salads?
But I have never freezed any cheese!
Cottage cheese makes a great dip for vegetables. Put some in a blender with fresh herbs and bit of green onion and puree for a few seconds. I also use it as a pizza topping instead of tomato sauce. I add spinach, seasonings, dill and some cubed mozzarella.
You can freeze cottage cheese, feta and other cheeses. Types like cheddar and mozzarella will crumble when they thaw, so they won't be good for slicing, but are great for pizza, lasagne and casseroles. Soft cheeses like brie aren't good for freezing.
There's a new single-serving cottage cheese product at our grocery store called "Rachel's." It's like yogurt in that it's plain cottage cheese mixed with various flavors. Some are savory (cucumber dill, sun dried tomato, bell peper) but some have fruit flavors.

Buying those made me realize that you can treat cottage cheese just like you'd treat plain yogurt: flavor it with fruit, honey, jelly, chutney, etc.
I prefer to sweeten up my cottage cheese. I mix it with fruit or sprinkle a tab bit of sugar on it. When I was little my mother used to mix it with strawberry jelly, I loved it then but now it just doesn't seem right...yuck.
I like using cottage cheese instead of ricotta in a vegetarian lasagna my mom used to make. It's a lot lower fat, and tastes delicious.
Feta cheese will be fine for two weeks in an airtight container. Try storing it in some high quality EVOO with herbs to add some extra flavor.
I eat it plain - all the time. Fat free cottage cheese is actually pretty tasty too. I also use it in wraps and replace sour cream with it for tacos, chili, etc.... Blending it and using it as a dip is a phenomenal idea and I can't wait to try it. You could also do that and sweeten it with some splenda and add some cinnamon and a little instant, sugar-free vanilla pudding and it would be delicious! Cottage cheese really is one of my go-to staples for lots of protein and calcium.
