I heart my crockpot
I love my crockpot, as I can come home to a hot meal ready to go.
I have made spaghetti sauce, soups, chilli, etc.. in my crock pot (veg natch)
but am always looking for new veg recipes to try.
I don't do dairy or cheese, the only animal product I still eat is free range organic eggs, preferably the ones I get from a local farmer, when his chickens are in the mood.
I also love to try new foods,as long as they aren't too expensive
Any other veggie crockpot fans out there. Its a lifesaver when you work alot and want a nice warm meal with out a lot of fuss.
I like it in theory but it requires too much planning for me. :)
I'm more the type who comes home from work, peers in the fridge and decides what to make for dinner based on whatever I find in there.
I also have yet to join the crock pot love. I use my skillet 9 times out of 10 for all meals, with a pot second, a cake pan third.
But I hear you can even make lasagna in those making it much more versatile.

I'm the same except cookie sheet is my third. It's great for baking and broiling veggies and tofu.

I love my crockpot, too. I also have that cookbook, and will say it's excellent.
I always cook my beans in the crockpot; it's so much easier, and you don't have to keep an eye on it at all. Just rinse and pick through your beans, add water, and cook. Don't fill the crockpot more than 1/3 full of dry beans, and make sure to add water to the top. Cook on high all day; you don't need to presoak the beans.
I also make granola in mine (I think there's a recipe in the cookbook). You can also bake breads, roast potatoes, etc. It's one appliance I couldn't live without. Great in the summer when it's hot, too. The kitchen doesn't heat up like it will with stovetop cooking.
Last night I put in some (whole) oats and water.
this morning I added apples, cinnamon, raisins and maple syrup. Yumm
although next time I think I'd use more water, as it was a bit thick
I also did red cabbage with veggie brats (also raisins and apples) and my sweet and sour concoction. it was pretty good, a bit more sweet than sour.

So you can keep track of what you eat - which enables you to analyze your foods and receive the following:
- Health Score of your overall diet
- Warning when you approach your daily calorie limit
- Overview of the good and bad nutrients
