what the heck! moldy food
I made muffins on monday, today is Thursday and there is already mold starting to grow on them!! Good thing I put a few in the freezer after baking them... is there any way I can prevent this from happening? Or is this where unhealthy preservatives come in??
Ker-ching!... You got it with the preservatives. Real food goes off. Fake food pumped with additives can exist in suspended animation for weeks and months.

Would it be better to store them in the fridge? Or just freeze them and defrost as I want one?
That depends on how quickly you eat them and how quicky you want to eat them. For me I tend to take out a bag of about 6 and put them in the fridge and eat them over the course of a week. If it's something that I'll eat all 6 of at once then one at a time is better.
