hey matie welcome. ensures are really good. the main thing is to eat 3 meals and snacks with all the food groups at each one . things like nuts are good for snacks as they are high calorie very nutrious and arnt to bulky . better not to eat to many veggies and fruits as they are bulky and may fill you up , but havnt many calories . just try your best, eat what you fancy and plenty of it . better not to exercise to much either your on the right track , good luck h x
Make a healthy, good-fats banana bread and while its still warm, take a slice and smother it with peanut butter. you'll want to eat more after that first slice, and its healthy and densly caloric.
A good place to start would be to record your complete food intake using the CC food log. You'll need 2500-3000 cals a day as a start-point for weight gain, assuming you're not particularly active. See how your current diet measures up and, if it's too low, increase as appropriate. The usual advice is to eat 'little and often' meaning plenty of smaller-sized energy-dense meals and snacks, rather than very big, bulky meals if you're not used to large amounts of foods.
There is a good list of energy-dense foods at the top of the Weight-Gain board. Start with breakfast and take it from there.
Strengthening & toning exercises (rather than running or similar) will help convert the extra energy to muscle bulk. You could reasonably expect to gain 2 or 3 lbs in 2 weeks. If you don't gain on 2500-3000, increase by a further 500 cals.
Good luck
