Help! 200-300 calorie dinner ideas!

I went a little wild at lunch time and need to keep my dinner at 200-300 calories. I'm also cooking for my 2 year old and my grandma tonight, so I don't want to have something only I will enjoy (I will probably just end up having to limit my portion).

Any ideas? I'm heading to the store after work so I can do some shopping. Thanks!

It's probably too late for this but for in the future you could try grilling some skinless, boneless chicken breasts and vegetables? Eggplant, corn, zucchini, asparagus, onions, and bell peppers are all delicious grilled.

Since I'm in Alaska and it's cold out (it's already snowed here!) i'm a big fan of oven roasting as opposed to grilling. But you just made me think of doing some roasted asparagus tonight, that sounds really good. Thank you for your ideas! I'm alittle behind time zone wise, I'm still at work for another hour. :)

I wonder what I could do to go with the asparagus? I hope it's in season here.

asparagus should be in season.... i'm in ak too (south) and i saw it at safeway last week. it was looking really good, actually :)

A healthy and delicious chicken and vegtable meal chocked full of flavor and wholesome goodness

See below for; (without rice;served as soup only)

serving size 195.00 grams, 138 calories, 4.3 total fat / 1.1 saturated fat, 6.9 carbs

 

Ingredients 12 ounce chicken breasts, bonless, skinless 1 stalk celery 2 cups carrots, chopped 1 onion, chopped 2 tomatos, diced 1 cup water

Directions

  1. Chop chicken breast and slow cook in large pan.

  2. Chop carrots, celery, onion and add to pan.

  3. Add 2 cans diced tomato's and 1/2 cup of the water.

  4. Season to taste. My family enjoys tasty seasoning so I tend to be heavy on the garlic. Add salt, pepper *a dash or two or ground red pepper makes for a great taste! but with just a dash or two does not create a 'hot' factor.

  5. Simmer for an extended period of time; adding water as needed so the contents stay 'juicy'/will have 'juice' when served.

  6. Try Servng over 1/2 cup brown rice is delicious!!

P.s. even my 5 year old loves it!
