HELP - any cheap n cheerful quick fix recipes? stuffed tomatoes etc...?
ive not been on here before n suddenly thought try makin ur food more interestin, i love veggies n salad but how many times can u eat plain veggies n plain salad lol
any healthy, more exciting ideas? money is really really tight so cheap things wud be beneficial to me, spose pasta things etc?
any help wud be lovely thankyou xx
There are so many things you can add to salad to make it taste completely different. Maybe try adding nuts, low-cal cottage cheese (onion & chive flavour is amazing), & low-cal coleslaw?
With your salad you could try things like falafel balls, pitta bread with hummus and stuffed with salad, and Quorn fillets ; they're microwaveable for lazy people like me :)
I never spend more than 10 minutes preparing my lunch, and I'm a student so I have a weekly food budget of about £15. It's totally do-able.
Found one on here yesterday for Black eyed Pea Soup, its lovely and very simple: 1 tin of black eyed peas, 1 tin of chopped tomatoes in herbs, blend together and season. Thats it ! Simple and cheap
I mix my salads up all the time. I love spinach and have low iron so that is generally my base, but you can play around with that.
On top:
1. Strawberries in thin slices, almond slivers and raisin.
2. Grill onions in some spicy salsa and add in some black or kidney beans.
3. Avocado, apple or pear, bell pepper and tomatoes.

take a red bell pepper halve it and take out the seed
make 1/2 cup of brown rice
saute 1/2 an onion with garlic in a pan (spray with cooking spray to stop sticking) stir in 1/2 cup diced tomato's and 1/2 cup of corn kernels then mix this with the brown rice. I add some hot red pepper flakes too
take the mix stuff each side of the pepper and bake for about 15 minutes or until warm

I love taking a roma tomato (any will work) - slice it in half - sprinkle some parmesan cheese on top (a little goes a long way) and dried basil on top - bake in the oven until cheese is bubbly and tomato is soft = tada! Easy! And yummy. I usually serve this as a side dish to white fish

Bean Tostadas or Bean Nachos
Old El Paso brand tostada shells = 2 pc = 100 calories
Old El Paso brand fat free refried beans = 1/2 cup = 90 calories
I smeared beans on tostadas and stuck them in the microwave for 45 seconds, then I topped them with:
big handful of lettuce = 10 cals?
reduced fat cheddar cheese = 1/4 cup = 80 cals
Rotel tomatoes (Mexican Cilantro mix) = 1/2 cup = 30 calories

Deviled eggs are great. Boil however many you`d like, cut in half lengthwise, scoop out yolks, fill white halves with mixture of your choice. You can include all, some or none of the yolks when preparing the filling. Get creative, mix in stuff like mashed veggies or beans, tuna, cottage cheese, sauces, your favourite seasonings, anything goes with egg whites! You could even make something sweet, like grated apple with cottage cheese and cinnamon sprinkled on top.
Stuffed tomatoes... interestingly enough that's what I had for dinner. Tuna Tomato Cups to be exact. Scoop out a medium tomato, and stuff it with tuna salad (chunk light tuna, reduced fat mayo, sweet relish (sugar or sugar free), garlic salt). Serve greens on the side, I like a berry vinaigrette for dressing. Salad can be spruced up easily, try different veggies, like zucchini, peas, broccoli, oh anything veggie pretty much. almonds and dried cherries go good too but they're a bit more expensive. Tomatoes are also good stuffed with cottage cheese. Hope this helps

yes, but avocado is filled with all the good fats that you need for good nutrition. A quarter of a fruit is plenty - about 73 good calories.
