Help! What fish for BBQ grill?
We are going camping this weekend and it's usually a whole weekend of beef, beef, and more beef. I can't bbq chicken breast because it always comes out too dry for anyone to enjoy.
I know shrimp is easy but can anyone recommend a good fish (and recipe) to put on the grill?
Firmer 'meatier' fish will do well directly on the grill. Things like salmon, mackerel and tuna, for example.... bit of Cajun seasoning perhaps. You could cut tuna into chunks and skewer it with various vegetables for Fish Kebabs. Softer textured, more delicate white fish does great if you wrap it in tinfoil parcels with a few herbs, a little butter, some salt and pepper..... takes no time to steam through.
My favorite is wild salmon. Halibut is also good, also ahi tuna. But salmon is hands down my favorite thing to grill.
I just got hungry reading your responses. Thanks! I'll look in to it. BBQ always = beef or pork in our family. I need to change some of these traditions.
For skillet I like the "steaks" or fillets. For BBQ whole fish all the way! Snapper is good for that. The key is not to flip it over too soon or the skin will get stuck to the BBQ. I like to keep it simple. Salt and pepper the insides, stuff in some lemon wedges, sprinkle more lemon on the outside. If I have miso paste I mix that in with pepper, and soy sauce.

Buy a can of Pam and spray it on the fish, sprinkle with seasonings and then throw it on the BBQ. I always cook my fish filets on the bbq at home. Salmon and swordfish are my favorites. Good luck!

Don't cook the chicken so long! :)
It doesn't need to be BBQed to be cooked on a grill. If you want chicken breast, season them and wrap them in foil packets and throw them on the grill. They come out nice and juicy. Same goes for fish.
I love grilled Mahi Mahi. I marinade mine for about 30 minutes in lime juice, rosemary, oregano, cumin & chipotle chili powder. Just a few minutes on the grill and it comes out very tasty.

my favourite still is Mahi Mahi though.. but of coarse you could grill pretty much ANY fish, just season it to your preference, wrap it in tin foil, and through it on the grill. This works exceptionally good with whole fish too, like rainbow trout
mmm, grilled salmon is the best! But for the chicken, just pack a bunch of drumsticks in a freezer bag with a bunch of BBQ sauce and toss that in the cooler. They will marinate for the whole trip to the campsites. Throw them on the grill that night and you will have killer BBQ drumsticks. So good! You are all making me want to go camping!
It's a week late, but don't forget about trout. This is the ultimate Western campout meal by the stream or lake....big fresh-caught brookies or rainbows in the pan over a campfire....all they need is a little S&P for seasoning.
I hate to be the stickler in the bunch but being from Texas, I have to say something. BBQing and grilling are two totally different things. Just because you put meat on a grill doesn't mean it's BBQ. BBQ is when you slow cook meat over low heat. Slow cook as in 4, 5, 6 or more hours. Grilling is grilling, BBQing is BBQing.
Sorry but it's a rule in Texas to know the difference between the two. LOL ![]()
That's swell, but I think you can still have BBQ chicken from the grill (i.e. chicken marinated and cooked with BBQ sauce). I would say that slow cooking while camping is not exactly feasible. I guess it would be BBQ grilled chicken? Grilled BBQ chicken? Whatever, it's still delicious! And in my opinion, Santa Maria Tri Tip BBQ is the best in the west. ![]()
