hi all,
I have been having cravings for pancakes and am looking to perfect a low cal option in time for pancake tuesday! I've seen a few oaty options, can i sub ready brek in place of flour and egg whites and skimmed milk? any good tried and trusted low cal options?
oh how i love them!
I know I just posted an entire thread on this recipe, but it was just so darn good and I think you may really like it, if you looking fora low cal pancake fix
3/4 cup egg whites, 3 packets Splenda, 1 tbsp Cinnamon, 1/4 cup 8th Continent Light vanilla soy beaten in a bowl with a fork.
Cook mixture on frying pan coated with Pam, in a circular shape, (or you can make mini circules for silver dollar like french toast circles)
Cook evenly on both sides, then top with syrup and butter (I use fat free promise and Walden Farms SF Pancake syrup)
I make these every weekend, my son and I LOVE them!
Whole-Wheat Buttermilk Pancakes
3/4 cup white flour
3/4 cup wheat flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 eggs
1 cup lowfat buttermilk
1/2 cup skim milk
In a medium bowl wisk together flours, baking powder, baking soda and salt. In a seperate bowl stir together eggs, buttermilk and milk. Add wet ingredients to the dry ingredients and mix gently until just moistened. Overmixing will result in a tough texture. Cook pancakes as usual using a 1/4 cup measuring cup to make 12 equal portions. Each pancake is 100 calories.
I am a pancake addict
I use buckwheat and whole wheat pancake mix. Half and half. I use water and one egg white.
For toppings I use fresh fruit. Fruit flavored Motts no sugar added apple sauce and sugar free Golden Griddle maple syrup. Smucker's also makes a sugar free strawberry topping that is very good. That is the only time I use artificial sweeteners. The apple sauce does not have any artificial sweetener. It is very good. I love the pomegranate and the mixed berry.
1/4 c oatmeal, 1/3 c cottage cheese, 3 egg whites, cinnamon to test. Mix up in blender. Spray frying pan with Pam and fry on both sides till done. Makes 3 large plate sized pancakes for a total of 230 calories, 2 gram carbs, 27 grams protein 1 gram fat
1/4 cup oats, 2-3 egg whites, mushed up banana, a dash of cinnamon. Mix all together and fry in a pan that's been sprayed with PAM. I usually use a small pan and make one huge pancake. YUM!
I make a big batch of the dry mix & keep it in the fridge so that it is handy for a quick pancake breakfast/brunch.
In all honesty, if you want a pancake, eat the real thing. Anything that has oatmeal in it will NOT fix a pancake craving. It's just too dense. Yes it turns into a "pancake" but it wont hit a craving.
That's just my honest opinion. I make oatmeal pancakes all the time. The recipe listed in a prior post looks like it would do the trick.
My two favourite pancake recipes:
Fluffy pancakes = http://recipecircus.com/recipes/billk54/BREAK FAST/IHOP_Pumpkin_Pancakes.html
(I omit the butter and sub whole wheat flour instead of all-purpose. I also add some nutmeg and cloves. You can use mashed banana instead of pumpkin too)
