help me with my "picnic" basket

Quote  |  Reply

My boyfriend is coming to visit next weekend, it's probably going to be the last time we see each other until I move to our new apartment in December. I got us a hotel room so we can have privacy for the weekend (I live with two roommates, it can get annoying).

I was thinking of making us a sort of goody basket for the weekend so we don't have to eat out every night, and because it would be kinda romantic, a picnic in the hotel room (at least i think so).

Anyways, I was thinking a chicken pot pie because that is pretty portable, and healthy as well (there will definitely be more veggies than chicken in this pot pie, I will make sure of that Tongue out) . What else would be a fun, portable, healthy food to go along with this? I'm pretty sure we have a fridge and microwave in the room. Any ideas would be helpful. Thanks!!

If you're going along the lines of romance , bring some strawberries, grapes, melon, pineapple, anything that's small and you can feed to eachother (if you feel like it!)

Instead of bringing potato chips to snack on, bring pita chips. They're very filling, and they're a nice indulgence.

I'd also bring something fun that doesn't require much cooking. Something as simple as packing a small baguette, some pizza sauce, some cheese/few toppings, and some herbs, and you can easily make a french bread pizza in the microwave. And you can have fun together making them : )

Hope that helps!
Fruit dipped in whipped cream is always a romantic and healthy side to a picnic.  You could make little fruit kebabs and dip them in light whipped cream or cool whip, and maybe even drizzle some sugar free chocolate syrup over them.

Oo, those are good ideas. I'm not sure if I'm exactly going for romance, but more along the lines of portable and delicious and HEALTHY. I always tend to gain and feel ill the next Monday after a weekend visit. Since I'm hoping we'll be alone all weekend, and without a kitchen I don't want us to end up at restaurants and eating crap.

I found a recipe for pumpkin biscuits so I think I'm going to make those as well as bring a nice fruit salad and some sort of vegetable dish. Since there is a fridge and a microwave I think that will be good, and keep me from wanting to die the next Monday. Also there is an indoor pool and sauna / hot tub, so I think I'll "race" him a few times...you know, to get some laps in :-P.

Be careful with that pot pie... I don't know what your recipe entails, but most pot pies have absolutely horrendous amounts of calories and fat due to the buttery crust and creamy sauce. Hopefully you got a healthy recipe though :)
