Some help reducing the recipe please. ^^;
Well, this is in a super large portin because it came from the kitchen of my school, so the portions are out there. I need serious help reducing it. >.<
5 lbs chicken, diced
4 green peppers
3 onions
4 quarts heavy cream
1/2 cup cumin
3/4 cup chili powder
1 can tomato
2 can chili sauce
4 tablespoons salt
2 tablespoons salt
3 can kidney beans
I know, I know, a "can" isn't exactly a serving, but this is the best I could get...I don't want to make a swimming pool full of soup. x_x
If you enter the recipe into the collection at allrecipes.com, then you can reduce it. I would try halving or thirding (is that a word) - it is pretty easy, if time consuming. A lot of recipe sites like cooks.com or allrecipes have unit converters, so you can do it line by line. Try converting the cans into ounces to make it easier. And remember you can always freeze it or take it to someone else!
Also, what I often do is sort of round up the amounts, so to speak. For instance if I end up having to use 3/4 of an onion, I use a whole one, preferably smaller than average; similarly, 4/3 of a pepper would equate to a larger whole one etc.
Me too, on stuff I like. Down on stuff I don't really care for. It's the half can of something that really bothers me - but there's usually something else I can use it for, or freeze it.
Thank you both very much. :)
