I love cooking Asian (not necessarily Japanese) but it is such a flavourful, healthy way to eat how can you NOT love it.  There are a couple of recipes that I LOVE to make and they are ridiculously easy and fantastic.

The first is a spicy Asian soup (probably closest in flavour to a Vietnamese pho)

Mix up a bit of Chinese chicken stock (a bit different from most North American kinds) and add in as much as you want of pre-chopped, jarred garlic and sambel oeleck (chile paste).  That's the base.  Now add in whatever vegetables (baby corn, water chestnuts, broccoli, bok choy, bean sprouts etc), meat (tofu, shrimp, imitation crab) and/or noodles (rice noodles, soba etc) you like.  The super delicious and really filling.

My other favourite is to make home made salad rolls.  Take a rice paper wrapper (sold as most larger markets or Asian specialty stores) and soak it in warm water for 5 seconds or so.  Then lay it out on a clean dish towel.  Fill with your choice of lettuce, bean sprouts, rice noodles, cilantro and if you like, some sort of protein (shrimp, immitation crab, chicken or tofu work really well).  You will eventually fold this up like a burrito (fold in top and bottom, then one side and roll up onto remaining side).  Instead of dipping in high calorie peanut sauce, I recommend a combo of hoisin and sambel oeleck.  This makes and awesome spicy sauce for WAY less calories.

I have a lot more recipes so I will try to post more as I think of them.  Hope you like these... they are a huge hit in my house :)
