Hey Whats for dinner??? Any ideas?

Well, I am out of ideas. This is all new to me and I really don't know yet what is really low cal. I don't want another salad for dinner and last night was Go Lean Kashi cereal correction the last 2 nights. Tonight would be nice to eat something that didn't need milk or salad dressing!!!! What the heck are you guys eating???

BTW, I didn't think my husband would like tofu at first either he is a meat and potato kinda guy.  But he has actually REQUESTED it for dinner before after I made a couple awesome recipes!  It is possible, my friend, it is possible :)  LOL

Wonders never cease ~ I did the tofu last night and my husband asked me if marshmallows were on my diet!!! I need to find some recipes!!!

I am searching the web looking for interesting ways to cook tofu!!! In the meantime, tonight at my house dinner will be a Balsamic Parmesan Chicken and garlic vinaigrette green beans!!! Both recipes found at cooking Light.  Thanks for the recommendation given yesterday!!! This will be so much fun.  Man I better eat something all this talk about food is making me really hungry!!! No starvation kind of thing going on here!!!

The Stir-fry noodle salad and Pad thai I linked both use tofu! There's also Asian-style tofu & cucumber noodles, though I suggest your hubby have larger helpings of all of these remembering his size and weight. Again, as mean it is, his caloric needs will be higher than yours.

EDIT: CC also produced Broccoli and Tofu with Spicy Peanut Sauce and Spicy Stir-Fried Tofu with Snow Peas, Peanut Butter & Mushrooms. Personally I'm going to be trying the former, as I have some tofu that also needs using.

I took a quick look at the stir fry noodle. It might be hard to find some of the ingredients in my town.  It is small and "civilization" is about an hour away.  But tonight I will check to see if one of our grocery stores carries what is needed.  It might be that I never looked before!!! thanks for that web site.  I was there earlier and it is really awesome.  I found one recipe I really thought was interesting and  I's sure there are a lot more to come!!! Last night I had vegetarian tacos. I use Yves Mexican Ground Round and regular taco shells (65 calories each). Add tons of veggies, lettuce, tomatoe, red onion, corn, peppers, etc. Some fat free sour cream and cheese, and add some salsa. Awesome. Three overflowing tacos, is about 400 calories.

Tonight will be some fish... just not sure how I will cook it yet.

You had talked in the beginning of this thread about liking pasta because it is easy - I am the same way.  Have you ever tried Spaghetti Squash?  I cut the whole squash in half and bake/roast it in the oven for 40 min or so.  While it is roasting I usually make some marinara sauce (about 2 cups for the 2 of us) and brown 2 oz of sausage for each of us - I think it is about 360 cal for both of these parts together.  When the squash is done, it shreds into spaghetti-like strings, and when it is covered with the sauce and meat, it is downright tasty stuff!  It isn't exactly like spaghetti and meatballs like grandma used to make, but it is about a 400 cal alternative to a 1200 cal plate of spaghetti.

I also like to use orzo pasta, 1/3 cup dry for each person and whole wheat if I can find it, and mix it with 6 oz tilapia that is pan-seared in a bit of olive oil and seasoned with Essense of Emril.  Then I pour a 15 oz can of diced tomatoes and some zucchini into the pan with the fish, break up the fish into small chuncks, add the cooked orzo, let all the flavors meld and heat through for about 5 min.  Add a dusting of parmesan to the top once it is in the bowl and you've got another 400 cal meal that will really fill you up and appear to be A LOT of food on your plate.  It is reminicent of the flavor of bouillabaise.

Traycee, I love Mexican!!! when I was on Atkins i would do the low carb tortilla and sauteed chicken with a little onion and then wrap it up with lettuce, cheese and salsa.  I haven't a clue how many calories it came to but it was good. 

Lev2 I have never had spaghetti squash!!! But I have heard that it is really good. i just went and looked it up and there was a suggestion to serve it with a little butter and parmesan cheese!! That sounds so heavenly to me. Great idea! Thanks!!!

Last night I made seafood casserole using scallops, shrimo, and filet of sole rolled up. I sprayed my casserole dish with olive oil, layered in the seafood, and sprinkled homemade toasted wheat crumbs lightly on top with a tablespoon of melted butter mixed with the juice os a lemon. I added chopped parsley, salt, pepper, and garlic powder.

I made cole slaw with a vinegraitte and some oven baked "fries". Very low cal and tasted great.

Tonight I'm having lentil loaf.  This week I've had lentil chili, chickpeas in a tomato wine sauce with feta, stirfry chicken with cabbage, onions and carrots (didn't have any other veggies available), spicy southwest coleslaw...last week was pan seared red snapper, curry tuna, sauteed kale over rice (you can use that as a side though, I just love kale!), indian dahl.  Next week I've got whole grain pizza, veggie bean curry with raisins, lentil soup for lunches, a bean salad for lunches too...

I use allrecipes.com, they have a low calorie option, low fat, low carb, vegetarian etc.  I've used them for years and adore their recipes, the ratings, the adaptability etc.   

Thanks for the website!!! I love how organized you are!! Here is a  recipe I found to top off Spaghetti Squash.  The calorie content wasn't given but I imagine it isn't bad.

  1. Saute 1 onion, 1 clove of garlic in 2 tablespoons of oil until onion is tender. Add 2 chopped tomatoes and saute until tomatoes are warmed. Add this to the squash. Toss with 3/4 cup feta cheese and 2 tablespoons chopped fresh basil. Garnish with sliced black olives.

Last night I made ground turkey burgers, sweet potato fries, and brocolli with garlic.

I'm usually in a rush when I come home from work and need something that will last two dinners for me and DH.  

Turkey burgers:
- 2lbs ground turkey
- 1/ 2 cup finely chopped onion
- 4 sundried tomatoes finely chopped
- mrs. dash garlic & herb
- red pepper flakes

mixed together well and make 6 patties. grill or bake till done. serve with favorite mustard

Sweet potato fries
2 medium sweet potatoes
- peel and halve and slice like thick steak fries
- spray with butter pam
- stick on grill or bake on nonstick cookie sheet and bake on 375 for 20 mins

Broccolli with garlic
- chop up broccolli, add 1 to 2 finely chopped garlic cloves, sprinkle with mrs dash lemon pepper, and add some lemon zest
- place in microwave safe bowl and add an inch of water, cover with plastic wrap. Microwave for 5-8 mins.

Done!    Hope you like it!

wow thankyou i am going to try that i am a teenager to just turned seventeen and i weigh seven stones but i would like to have a better healthy diet as i weigh seven stones but would like to weigh a dress size ten as i feel i am underweight for my age so i am going to start off with some healthy food options thankyou for you suggestion i will try it
