I am always looking for ideas - my creativity - hmm more like what creativity!!!

So it is a constant reading recipes and hoping that soon there will be a Sunday where i can spend the day cooking for the week - assuming that I will know what to cook!!!

So today it was a Turkey mini subway with one half slice of cheese lettuce, a little bell pepper, some olive and vinegar!!! 210 calories  on the new 7 grain wheat bread. For desert a bag of sliced apples at 35 calories.  Yummy!!! Only problem I could have eaten about 2 foot long ones instead of the mini.  Glad I didn't.

So please share what you are doing this lunch!

Sloppy joes with ground turkey... side of beans

Turkey sandwich on whole wheat bread with a little spicy mustard. Teamed up with a DELICIOUS honeycrisp apple, and a coke zero :) mmm lunch.

Little pots of leftover chickpea curry, dhal, reheated homemade fishcakes I'd frozen the other day, a wee ball of rice in a bag, carrots, cherry tomatoes and some cherries I couldn't resist buying as I went through the market to work. £5 a pack in sainsbury's, £1.50 in the market! Supermarkets are such a rip off...

 

And about three teapots of green tea. It is REALLY cold.

Course it is dinnertime here so the question is what's for dinner!

I am making crispy duck! It will probably go wrong.

For lunch today I had cheesy crackers with laughing cow cheese spread on them (loooveee cheese). Then an apple and grape fruit bag :) Yuuum.

Not so good lunches so far this week, but last week was awesome!  Check it out

1 corn tortilla (50 cal) + 2 oz shredded chicken breast (85 cal) + 1/4 cup black beans (50 cal)  + 1/2 oz shredded cheese (50 cal) = 215 calories total

Tuna melt - 2 oz tuna (57 cal) on one slice high fiber bread (65 cal) topped with a slice of 2% milk American cheese (50 cal) = 172 calories

2 slices turkey deli meat (50 cal) rolled in a 6" Carb Balance flour torilla (110 cal) with a slice of 2% milk American cheese (50 cal) = 210 calories (I like to warm mine in the microwave and roll it).

A medium sized red potato (150 cal) "baked" in the microwave, topped with 1.2 ounce shredded cheese (50 cal) and 1 oz cubed ham (30 cals) = 230 total

What is a honey crisp apple???  That sounds amazing.

I have faith in you I am sure your duck will come out fine.  My husband loves duck!!!

Vegetarian Black Bean Chili topped with about 30g of avocado and a sliced gala apple. About 350 calories.

I'm trying to eat about 400 calories 4 times a day or split 200 calories for a mid afternoon snack and an evening snack.

Dinner will be something I haven't quite figured out yet. :)

Your lunches sound really good.  Horse lover here.  I looked at your gallery and you have some nice looking horses.  Mine have been on vacation just a little longer than they should be.  I spoke to a trainer last night and my next goal is to hire this trainer and hire this trainer and start learning a bit about reining.  I love to watch reining and have dappled - so I think it would be a fun challenge.  I think it is time to add some horse pics to my galley.  I lost them all and now the horses are a mess!!! LOL!

I can't imagine only eating a baby sub at subway though...You know if you get a 6 inch one with no cheese and lots of veggies it's still only around 280 calories, right?

Tturbo, I can relate to the dinner problem.  I am thinking about sauteing chicken tenders in a little smart balance and olive oil with some sweet onions and another veggie.  But I need to figure out the calorie count. There is also a magazine that sounds really interesting and that is Clean Eating, I'm waiting on my first issue.  good luck with dinner!

 I have  to confess it left me hungry!!! I didn't know that a 6" could be so low in calories. Are you referring to the turkey?  Thanks for the heads up.

Lunch: Bean chili mixed with oatmeal and sliced carrots

OK, lunch and usually breakfast for me is chopped up fresh vegetables with either balsamic vinegar or low fat yogurt dressing. 

You can fill yourself up at less than 100 calories with a great tasting lunch.

Next time at the store pick up your favorite raw vegetables.  I keep on hand:  Cauliflower, onions, cucumbers, green and red peppers, serrano peppers, tomatoes, cilantro, celery, green onion, romaine and iceberg lettuce.

My son and I don't like the same vegetables - I cut up (very small pieces) what he likes, and what I like and keep in two large bowls.


Lunch time is easy - put a cup or two of fresh chopped up veggies in a bowl - pour 1 tablespoon balsamic vinegar (sometimes I also add Dijon mustard/Tabasco/whatever) mix it up and have yourself a little feast.  Sometimes I use a low fat yogurt salad dressing instead:

1 cup low fat yogurt

4 tablespoons salsa

1 tablespoon extra virgin olive oil

1 teaspoon lemon juice

1 teaspoon garlic salt

14 calories per tablespoon - compared to 140 calories for 2 tablespoons of most blue cheese dressings.

 

 

 

redsweatshirt - you must be STARVING!  I hope you are adding some protein in somewhere along with that delicious sounding salad!  The dressisng recipe sounds awesome .....

 

 

I packed lunch today:  turkey burger, whole wheat light bun, salad with light blue cheese dressing

 

BUT friends persuiaded me to go out to lunch, so i am saving that for tomorrow nad instead I had:

small Greek salad with only half the dressing nad a slice of deluxe pizza on whole wheat crust

 

Glad I worked out this mroning so that I could fit in some extra calories at lunch with no guilt!

 

A favorite lunch of mine that is WAY simple:

frozen cooked shrimp (defronst them before eating  LOL)

bowl of broccoli slaw

dressed with Paul Newman's light sesame ginger dressing

That lunch is less than 300 calories .....

 

Today I had a boba tea, which the calories are sketchy on b/c mine had milk.  But it was too rich to drink more than half so I'm counting it as 250.  I also had a greek salad which I added broccoli to.  150.

I stopped eating both breakfast and lunch back in my twenties and so eating in the morning and at lunch is different for me - definitely not starving at all.

This is the third time doing a weight loss thing for me - the other two times I cut carbs nearly totally (except every other weekend) and ate as much meat/protein as I liked.  Never hungry, ate as much as I liked.Both other times it worked like a charm - went from 190 to 140 in about a year, and the most recent 6 years ago went from 180 to 160 very quickly.  Blood levels on the protein thing are always perfect - For me it's easy to not eat carbs -

This time I'm calorie counting for the fun of it and finding actual weight loss is nearly identical to the math of counting calories vs. daily burn of calories.  Fun stuff - and I love Balsamic vinegar!  My average lunch with a cup of veggies and Balsamic/Dijon/Tabasco dressing isn't more than 35 calories total.  Average dinner - steak/chicken or fish and vegetables.  Never too many calories - you need to save some room for a martini or two.  :-)

funny you should mention saving calories for martinis - I made sure to save some tonight for soem wine!  Tues nite Supper Club at our house - roasted turkey breast, mashed potatoes, green beans and ..... wine!

 

We are all so different in how our bodies react to diff stimuli ...... so let me amend my last statement ---- I WOULD BE STARVING!!!!
