Hey all, looking for suggestions/recipes.

I want to find a good tasty muffin with high fiber and relatively low calories (like one muffin = 100-200 cals).  When I went to the grocery store all the muffins were like cake, high-fat, high-sugar, high-calorie, and low fiber.  :/

Anyone have any suggestions or recipes?   Thanks in advance!

trader joes has GREAT high fiber muffins.

they're only 80 cals with 13g fiber!

i like the apple cranberry kind :)

really? my package of tj's muffins says 1 serving is 1 muffin...servings per container 6...80 calories.

What's the carbs/protein/fat on them? You can find out roughly how many calories are really in it from that? (At least to tell whether they mean half or whole.)

13g, that's what I'm looking for!  160 cals a muffin isn't bad.  The ones I was looking at in the store the other day were like 400+!  They were big, but good grief, I don't want to eat half the muffin for 200-some cals and get 0.5g of fiber out of it.  Meh.

Hmm...the package says 1 "cake" is 57 grams, 80 calories, 1.5 grams of fat, 22 grams carbohydrates, 13 grams fiber, 2 grams sugar, 5 grams protein.

If a serving size really is half a muffin...that's really misleading because the package clearly says that one serving is one muffin...there are six muffins in a package and it says servings per container is six.

They are called Zen Bakery Fiber Cakes and they come in 2 flavors: blueberry and apple-cranberry. NUTRITIONAL INFO HERE.

I loved the taste of the the Vitamuffins. However, they reaked havic on my digestive system. Gave me really bad gas and gas pains (as in, bent-over sick). I've eaten other products with simular fiber content so I'm not sure what is was about them.

I get really good no-sugaradded/low calories muffins from Wegman's. With them, one muffin is *2* servings (80 calories). I cut them in half, wrap in press n seal, and freeze so they stay fresh.

The new 100 calorie Hostess muffins are very good. I've tried both flavors.

Make your own black bean brownies or pumpkin brownies.

I make bran flax muffins from scratch. When made with spelt flour, honey, and no milk (see substitutions below) they have 155 calories and 3.5g fiber.

 

Bran Flax Muffins

1 ½ c unbleached white flour – I used spelt flour

¾ c flaxseed meal

¾ c oat bran – I sometimes use oatmeal

1c brown sugar – I use 1 cup honey

2tsp baking soda

1tsp baking powder

½ tsp salt

2 tsp cinnamon

1 ½ c carrots, shredded

2 apples, peeled and shredded

½ c raisins

1c nuts chopped

¾ c milk – when using honey I omit milk

2 eggs, beaten

1 tsp vanilla

 

**No sugar alternate – Omit sugar and milk and add ¾ c honey.

Mix dry ingredients. Stir in carrots, apples, raisins and nuts. Combine milk, eggs, and vanilla. Pour liquid ingredients into dry ingredients. Stir until moist. Don’t over mix. Fill muffin cups ¾ full. Makes 24 muffins (I top each with a walnut). Bake 350 15-20 min. Store in fridge for several days (or freezer in zip lock bag). When frozen they thaw nicely in the microwave for ~20 seconds.

 

I like to make my own muffins too, although I use Betty Crocker Low Fat Brownie mix. Here's the recipe.. About 200 calories and  7 grams of fiber.  Scores a A on analyzer

 

  • 1 pkg Betty Crocker Supreme Brownie Mixes Low-Fat Fudge Brownie Mix
  • 3 cups Kellogg's Original All-Bran Cereal
  • 1 1/2 tsp baking powder
  • 2 1/2 cups water

mix water and cereal and let stand for 5 mins. Add all other ingredients. Bake at 350f for 20-25 mins or until done. Makes 12 muffins.

It is interesting that though the NI for the fiber cakes on the website is for the entire cake, it looks like all of the NI for their muffins is for only half the muffin!

I just bought those blueberry reduced-fat trader joes muffins yesterday. My package clearly says "1 muffin=80 calories" too. They're pretty small.... maybe 2 inches across the bottom max, and about 2 inches high. They don't taste fatty or sugary... and they have a lot of blueberries.

Im going to stick with counting them as 80 each...

I made my own the other day and they were pretty good.  I used Splenda with fiber, but it only saved about 10-20 calories, so sugar is fine too.

1 cup all-purpose flour 1 tablespoon baking powder 1/2 teaspoon baking soda 1/8 teaspoon kosher salt 1 cup bananas, mashed 1/8 cup Splenda No Calorie 1/8 cup sugar 1/4 cup applesauce 1 egg 1/2 teaspoon vanilla extract Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.

  2. Mix together flour, baking powder, baking soda and salt. In a separate bowl, beat together banana, sugar, egg and vanilla. Stir in the applesauce and vanilla. Stir banana mixture into flour until just combined. Scoop batter into prepared muffin cups.

  3. Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted into center of a muffin comes out clean. Let cool before serving. For best flavor, place in an airtight container or bag overnight

you could add nuts or stuff if you want.  The calculated out to 66 calories each, made 12 muffins. I increased the applesauce to 1/2 cup.

Hey, if anyone revisits this post - the new (ish) Fiber One muffin mix is awesome.  They have directions on the side to do lower-fat versions with applesauce etc.  The muffins, like most Fiber One products, taste great and aren't gritty at all (something my fiance likes to complain about with high-fiber bread products).
