hi,

my names andrea and i wanted to share this recipe with you. I started my low GI diet 3 months ago and have lost 3 stone (please don't all shout at me that i'm going too fast....i am also on xenicol and need to reach 100kg by december so that i can have surgery!!!)....and have found this "concoction" to be a life-saver....it goes with any meat or is nice on its own as a soup or pasta sauce :) :

 

you need:

2 large courgettes

tin of tomatoes

tin of mixed italian beans

red pepper

1 medium onion

200g mushrooms

1 clove garlic

fresh basil

black pepper

chili sauce to taste (optional)

preparation:

chop all of the raw ingredients

open all of the tins

throw everything in a saucepan and bring to boil (no need to add water the juices of the tomatoes and beans are plenty!) simmer for 1 hour on low heat to allow vegetables to stew. ITS DONE!!!

these quantities will make an adequate amount for 4 large individual servings.(or more if you use the mix as a sauce/marinade) and will freeze for up to 3 months.....Enjoy!!!! :)

long way to go yet but its a good start!!...thanks x.........how about you? any good recipes to share? (especially sweet stuff....my sweet tooth could be my downfall!!) and whats your target?...you look great in your photo!!!
