High protein, low calorie meal: very filling
I am quite pleased with this. Although it seems very easy, I have just started to experiment with different foods and recipes because I am not a great cook. I usually stick to frozen foods or simple things like a tuna sandwich. I wanted to post this because maybe someone will learn something from it.
Ingredients:
6 Tbsp Egg whites, 1 Large Egg, 1 Tbsp Parmesan grated cheese, 1 Light cheese-slice, 1/4 cup of Salsa and Veggies(tomato, onion and green pepper, about 1/2 cup altogether)
I scrambled the eggs(used a little pepper as well) and then added the veggies that I chopped up. After it was done cooking, I sprinkled the parm on top and then put the cheese-slice on top of that to melt. I put the salsa on the side.
It was very yummy and after using up a lot of my calories on my breakfast and lunch I needed a low-cal meal to even things out. I also have been feeling like I needed more protein so this helped a lot.
It was approx. (may be different based on what ingredients you are using) 215 calories, 7 grams of fat, 10 carbs, 25 grams of protein and 2 grams of fibre.

Thank you jennablue! I can see how you can be creative with this - different veggies and so on. Eggs are so satisfying.

That sounds good. i am so hungry today. my breakfast did not stick with me for very long today.

Mmm - I will try mango salsa. I love salsa. Hummus is great as well and surprisingly easy to make.
Too say i love salsa is an understatement. i have it daily!!! i love it soo much!!!!
When I come home from shopping I sautee two red pepper, a yellow pepper and an onion in a tiny bit of I can't Believe it's not butter spray or EV Olive Oil.. I keep in the fridge and then, every morning I pour 1 cup of egg beaters in the skillet and add about 1/4 cup of peppers and 6 slices of chopped Land O Frost deli sliced Turkey.. and top w/Salsa.. Soo good! High protein low cal!
