I love making homeade soup, in fact it is one of my favorite things to do in the fall and winter months (other than watch football!) but it seems like all my soups are so high in sodium. Does anyone have any low-cal low-sodium high-taste vegetable or chicken noodle soups?
Thanks!
make your own stock - canned broths tends to be high in sodium
carmelise/brown onions in the stockpot to start
season with herbs or spices and minimal added salt
add a bit of MSG to enhance flavor
personally, i'm really active (i sweat a lot), so i eat a ton of sodium. but i often cook for my stepfather who has high blood pressure. my trick for flavoring sauces/soups is to make a huge amount of a veg puree: i'll sautee carrot, celery, onion, garlic, sometimes artichokes/mushrooms/tomato/peppers w/herbs and spices. then i put it in a food processor. it's good bec it'll thicken whatever soup or sauce you're making, and it's got a ton of flava.
I like adding lemon juice or vinegar instead. Tart is very near the taste receptors for salty, and you can often trick yourself into thinking it's salty when it's actually sour.
I suggest adding salt when you eat the soup, not to broth.
homemade soup is probably one of the healthiest things out there.
are you using boullion cubes in your broth?
This Tomato and Lentil Soup is fairly low in sodium despite using a little smoked bacon to add flavour! And this Carrot and Coriander Soup is even lower.
